A delicious Afternoon Tea Avocado Egg Salad Sandwich that's healthy too. Invite your girlfriends over and make this.
Like the more I dine out, the more I learn and the more aware I am of new flavors. As in my creative juices start flowing and I come up with new concoctions in the kitchen.
My inspiration for this sandwich is none other than Alice’s Tea Cup, an adorable bakery in Manhattan’s Upper West Side district. Recently at Alice’s Tea Cup, I ordered the Chopped Tea-Egg Salad Sandwich which comprised of egg, watercress, mayonnaise on 7-grain bread. It was so mouthwatering that I wanted to recreate a similar sandwich at home, but without the unhealthy mayonnaise.
And so I did, the Avocado Egg Salad Sandwich which comprises of avocado, egg, watercress, scallions, lemon on whole wheat bread. I even added a secret ingredient – Herbal Dijon Mustard – and it took this outrageously delicious sandwich to a whole new level. You must use this particular Dijon Mustard since it consists of 4 types of herbs - thyme, rosemary, basil, and marjoram - which add depths of flavor. Whole Foods is the place my friends! Enjoy this delicious sandwich which is perfect for an afternoon tea party with girlfriends, or anytime of the week really.

How to make Avocado Egg Salad Sandwich step by step?
- Start by boiling 3 eggs on medium heat. Once it boils, turn off the stove. Cover the eggs with a lid and let it sit for 10 minutes.
- Peel the eggs and place them in a large bowl. I removed the yolk of one egg.
- Add the avocado.
- Add the juice of ¼ of a lemon, this will prevent the avocado from browning. Also, season with salt and black pepper.
- Chop the scallions and add them to the large bowl - you only need ½ cup.
- Chop the watercress and add them to the large bowl as well - you only need ½ cup.
- Run a knife through the eggs and avocado – this will help them remain chunky.
- This is what you should have, notice it is chunky, not pureed.
- Take 2 slices of bread and trim off the edges.
- Take a small amount of Dijon Mustard ( I urge you to pick up the brand I purchased from Whole Foods ) and just glaze it on each slice of bread.
- This is what you should have.
- Top with 2 to 3 spoonful's of the avocado-egg mixture.
- Top with the other slice of bread and slice in half.

Avocado Egg Salad Sandwich (healthy, dairy-free, 100% whole wheat)
Vegetarian, Healthy, Dairy-Free, Gluten-Free optionIngredients
- 2 eggs, boiled

- 1 avocado
- ¼ juice of a lemon
- ½ teaspoon salt
- ¼ teaspoon black pepper

I love afternoon tea...my favorite part are the scones. I am not a huge fan of sandwiches but this one looks delicious. Especially minus the mayo (which I don't like!).

Oh man this sandwich looks divine- I cant seem to get enough of the eggs & avo combo lately! Another favorite is mashing up avocado with salt, pepper, and garlic powder and then spreading it on toast and topping it with poached eggs- LOVE!

You should try veganese half of the calories of mayanoise! Since avocados are very creamy and high in calories I don't think you would need though! Can't wait to try it! Looks delicious:)

Personally, I think you could sub sprouted greens (bean sprouts), or any leafy lettuce.
What did you use for the mustard as I can't find her specific brand anywhere and the online sites says it's out of stock with no idea of coming in.

My husband one day took 1/2 an avacado and mixed it with a chopped cooked egg, some salt and pepper, crisp romaine lettuce on toast. Delish! I love egg salad sandwiches and this is yummy. So now I always have hard boiled eggs and avacados on hand.

I am making this for a meeting this Saturday. But, I can't find Domaine des Vignes Herbal Dijon Mustard ANYWHERE. Not in stores, not online. Everyone says it's out of stock and they don't know when it will be in. Apparently, this isn't a popular enough brand to warrant stores carrying it. I did find one site, but it wanted to send me 6 jars. Yikes, I don't need 6, only 1. Can I just use dijon mustard instead?

Sure, you can use dijon mustard instead. This recipe is old and the brand of mustard I mentioned is old too, and probably nonexistent by now. Once you try the egg salad sandwich with dijon, you'll realize why I added it.
