Living alone these past few years I’ve gotten used to cooking quick and healthy meals like this Avocado Toast with Spinach & Egg. As much as I love cooking, once I come home the last thing I want to do is spend an hour cooking for one.

Hello, Eggs for Dinner!

Often times my single girl meals don’t make any sense since I find myself cleaning out the refrigerator and combining random ingredients into one dish.

Ironically, that’s how I inspire myself and come up with a new idea by accident which is how this scrumptious Avocado Toast with Spinach and Egg came about.

How to make Avocado Toast with Spinach & Egg step by step?

1. Heat up a cast-iron skillet on medium heat. Once hot, add extra virgin olive oil. Add fresh spinach.

2. Stir around. Season with black pepper and a little salt.

3. Spinach should be cooked in about 2-3 minutes. Turn off the stove. Set aside.

4. Now cook the eggs, heat up a cast-iron skillet on medium heat. Once hot, crack an egg one at a time.

5. Cook for a couple of minutes.

6. I prefer my eggs less runny, so I covered it with a lid.

 

7. Now assemble. Take 2 slices of toasted bread.

8. Top each toast with half the avocado.

9. Now top each toast with a generous amount of spinach.

10. Top with egg. One egg fell apart.

11. Top with Everything but the Bagel Seasoning Blend.

Ingredients

for the sauteed spinach

  • 5 ounces organic spinach
  • 1/2 tbsp oive oil
  • 1/2 tsp garlic powder
  • to taste black pepper
  • to taste salt

for the egg

  • 2 tsp avocado oil
  • 2 organic eggs

for the avocado toast

  • 2 slices sprouted wheat bread I like Ezekiel
  • 1 avocado
  • to taste everything but the bagel seasoning Trader Joe's brand

    i have heard so much about that seasoning, i just need to make a trip there. love love egg + avocado combo. definitely my idea of lunch, breakfast, and dinner 😛

      That seasoning is bomb, Dixya! And just $2. I can’t get over how good it is. I want to add it to everything. I love the egg and avocado combo too. So easy when you’re living alone. No hassles. 🙂

    Hi Nisha – I could have this for breakfast lunch or dinner! And I love that it uses everything I always keep on hand in my pantry and fridge anyway. Just bought four avocados today. Looking forward to trying this easy dish!

Before I became a mom, the idea of changing diapers and spit-up grossed me out. Now, no biggie. I can’t even count on one hand how many times I’ve put my baby to sleep and I get so excited to have some “me time”. To my disappointment, he wakes up 1/2 hour later and I have to start the process all over again… is he burped, is he wet, is he hungry? The days are long!

Despite the hardships of motherhood, one of the greatest joys has been watching and holding my baby while he sleeps, and knowing I provide comfort to him like no other. I’m sure he will get used to it and I’ll probably regret it later on, but for now, I am just soaking up these precious moments while he’s still little and innocent. ☺️⁠

Just in time for a New Years Day Brunch that won't Just in time for a New Years Day Brunch that won't have you slaving in from of the stove. 💫 BAKED STRAWBERRY FRENCH TOAST 💫 using @stpierrebakeryus NON-GMO brioche bread that's so buttery soft delicious. Simply cube brioche bread slices, whisk the egg batter, add the bread to the batter, and bake it in the oven. Finish with a dusting of powdered sugar and top with maple syrup. So good. BAKED STRAWBERRY FRENCH TOAST
🔺INGREDIENTS
4 eggs
1 1/2 cups whole milk
2 tbsp sugar
2 tbsp light brown sugar
2 tsp vanilla
1/4 tsp salt
1 cup strawberries, sliced
8 slices @stpierrebakeryus brioche bread, 1-inch cubes
1 tbsp sugar, for topping
Powdered sugar, for garnish
Maple syrup, for garnish

🔺DIRECTIONS
1. In a large mixing bowl, whisk the egg mixture together - eggs, milk, sugar, light brown sugar, vanilla, and salt.
2. Cube 8 slices of brioche bread - this should yield roughly 5 cups.
3. Transfer the brioche bread into the egg mixture. Make sure the bread is well-coated. 
4. Spray a 7” x 11” x 2” deep baking dish with coconut oil. 
5. Add half the brioche bread egg mixture into the baking dish.
6. Top with all the sliced strawberries.
7. Top with the remaining brioche bread egg mixture.
8. Cover with a plastic wrap and refrigerate for 30 minutes to 2 hours.
9. Top baking dish with 1 tbsp of sugar.
10. Place in the oven for 60 minutes or until the top is golden brown.
11. Serve hot. Top with powdered sugar and maple syrup. #brunch
