- 4 pieces romaine lettuce
- 1/2 cup tomatoes sliced
- 3/4 cup red onions sliced
- 1/3 cup cucumbers sliced
- 3 eggs boiled
- 1 avocado
- 2 garlic cloves
- 2 Thai green chilies
- 1/2 lemon squeezed
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/4 tsp garam masala
- 1/2 tsp Kashmiri chili powder or paprika
- 1/4 tsp red chili powder
- 1/2 tsp salt
- 6 slices 100% whole wheat bread for 3 sandwiches
Add Veggies - Grab a cutting board then add lettuce, onions, tomatoes, and cucumbers. Next add garlic, green chilies, and cilantro.
Add Eggs & Avocado - Now add boiled eggs, avocado, and lemon juice.
Add Ground Spices - Next add all the spices - coriander powder, cumin powder, red chili powder, Kashmiri chili powder, and garam masala.
Chop Away - Now chop all the ingredients on the cutting board all at once so it's well combined.
Make the Sandwich - Grab 2 slices of whole-wheat toast. Top with generous spoonfuls of the avocado egg salad. Enjoy!
