Avocado Egg Salad Sandwich (Indian Viral Chopped Sandwich

Avocado Egg Salad Sandwich is inspired by the Viral Chopped Sandwich. This Indian-inspired sandwich is easy, versatile, and so full of flavor. It comes together within minutes and makes a great healthy breakfast or brunch.

Ingredients

  • 4 pieces romaine lettuce
  • 1/2 cup tomatoes sliced
  • 3/4 cup red onions sliced
  • 1/3 cup cucumbers sliced
  • 3 eggs boiled
  • 1 avocado
  • 2 garlic cloves
  • 2 Thai green chilies
  • 1/2 lemon squeezed
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp garam masala
  • 1/2 tsp Kashmiri chili powder or paprika
  • 1/4 tsp red chili powder
  • 1/2 tsp salt
  • 6 slices 100% whole wheat bread for 3 sandwiches

Instructions

  • Add Veggies - Grab a cutting board then add lettuce, onions, tomatoes, and cucumbers. Next add garlic, green chilies, and cilantro.
  • Add Eggs & Avocado - Now add boiled eggs, avocado, and lemon juice.
  • Add Ground Spices - Next add all the spices - coriander powder, cumin powder, red chili powder, Kashmiri chili powder, and garam masala.
  • Chop Away - Now chop all the ingredients on the cutting board all at once so it's well combined.
  • Make the Sandwich - Grab 2 slices of whole-wheat toast. Top with generous spoonfuls of the avocado egg salad. Enjoy!
