Mexican Pizza Taco Bell (vegetarian, 10 ingredients, gluten-free option)

A copycat version of Taco Bell’s Mexican Pizza. Mexican Pizza is vegetarian and tastes just like the Taco Bell Mexican Pizza.

Taco Bell is my absolute favorite fast food place in the world. Oh stop, don’t judge me for it. It’s a chain I have loved since the age of 14 and the older I got my affinity towards Taco Bell only grew stronger.

My favorite item to order is the Mexican Tortilla Pizza. Aside from their Mexican Pizza, my other favorite items are the Bean Burrito, 7 Layer Burrito, and Spicy Tostada. Since I do watch what I eat most of the time, I can’t afford to eat Taco Bell as often as I’d like to, however I am capable of replicating some of their delicious menu items at home.

Recently I whipped up their Mexican Tortilla Pizza with Beans which resulted in a crispy outer shell by baking the tortilla. This makes a great dish to celebrate Cinco De Mayo!

How to make Taco Bell Mexican Pizza recipe step by step?

Bake the Tortillas

1. Preheat the oven at 400 degrees. Line a tray with foil.
2. Place 2 tortillas on a flat surface and lightly brush both sides of the tortilla with avocado oil.
3. Once preheated, put the tray in the oven. Bake for 10 minutes total, 5 minutes on each side so flip halfway. You can add multiple tortillas at a time.
4. Tortillas are done.

Make the Beans & Chop Veggies

1. In the meantime, make the beans. Empty the contents of the refried beans into a pot and cook on medium heat.
2. Add 1/4 cup of water and taco seasoning. Do not add salt since the taco seasoning has enough salt.
3. In the meantime, chop an onion. Add the onion to the beans. Once heated through, turn off the stove.
4. Chop the tomatoes, scallions, and jalapeno. Set cheese aside.

Assemble Mexican Pizza

1. Spread a couple of dollops of beans over the tortilla.
2. Top off with a little salsa and spread. Use your favorite salsa, or even Taco Bell sauce will work.
3. Place the second piece of tortilla on top.
4. Now top with salsa again. Spread.

5. Top with scallions, tomatoes, and jalapeno.
6. Top with cheese, make sure you get the sides.
7. Place the Mexican Tortilla Pizza back on the foiled tray and into the oven at 400 degrees for about 5 minutes. Check after 3 minutes.
8. Mexican Pizza is ready. Cut into 4 pieces and serve hot with Taco Bell sauce. You can also garnish with onions, cilantro, or sour cream.

Ingredients

for the baked tortillas

  • 8 wheat corn tortillas 2 tortillas per pizza, I like Trader Joe's organic brand
  • avocado oil to brush both sides of tortilla

for the beans

  • 1 15 ounce can organic pinto refried beans salsa style I like Trader Joe's
  • 1 1/2 tbsp taco seasoning I like Trader Joe's
  • 1/4 cup water
  • 1/2 cup white onion chopped

for the veggies, cheese, salsa (divided in 4 servings)

  • 2 tomatoes chopped
  • 1 jalapeno deseeded & chopped
  • 2 stalks scallions chopped
  • 1 1/3 cup mexican cheese shredded
  • few spoonfuls salsa or taco bell sauce

Instructions

    Any idea on how to avoid the air bubbles in the tortillas? Made these tonight and they were super yummy, but the air bubbles made the tortillas a little hard to work with…

    @Christian – How long did you bake the tortillas for the first time? And the second time? Perhaps reduce the amount of time you baked the tortillas the first time.

    Not sure why but my pizza did not turn out crunchy. It was more on the chewy side. Not sure what I did wrong. Any thoughts???

    @Anonymous – You probably didn't bake the tortilla long enough. When you removed it from the oven was it flimsy or crispy? Second, perhaps you put too much sauce. Those are really the only 2 reasons. Sorry about that.

    As for the taco bell packet- don't come to my house- I have a HUGE jar of packets- they work out perfectly in lunches.

    Very easy to make, but I did substitute the refried regular beans with refried black beans and it was really good. I try to use black beans whenever I can. This is a keeper for my family.

    @Anonymous – Sure, you can use flour tortillas instead of whole wheat. And you can add ground beef, but that takes away from the slightly healthy perspective, but it's totally up to you. 🙂

    thank you! This was my favorite item to get at Taco Bell. I have not eaten there is many many years and have missed the Mexican Pizza! I have made this 3 times and love every bite. I buy the Taco Bell Hot sauce which is not as hot as the one you get at Taco Bell it works.

    @Anonymous – I'm so sorry to hear the tortilla wasn't crisp.
    Did you brush oil on both sides? Did you add a lot of oil?
    Did you place the tortillas in the oven for 5 minutes on each side? If it wasn't crisp, did you leave it in longer? Oven should be at 350 degrees F.

    So I'm always curious why food bloggers never include nutrition facts in their blogs. After entering in everything you listed in your ingredients, I understand why. Food Bloggers don't want to know how terribly they're eating. Here, let me help you out. Each one of these pizzas has 646 Calories, 28g Fat, 55mg Cholesterol, 1465mg Sodium (that's like 80% of your recommended daily sodium intake), and 24g Protein. I don't care how good these are, there's a reason healthy people tend to stay away from fast-food joints.

    @Anonymous – FYI.. on my dessert section, I make sure to include the Nutrition Facts. I also focus on making desserts that range from Low-Fat to Full Fat.
    In regards to this recipe, had I eaten this at taco Bell, I may have believed your nutrition facts, but since I made this at home and used mostly vegetables, some cheese, I really don't believe the nutrition on this pizza is 646 calories.
    The whole point of this post is to make a healthier version of Taco Bell's Mexican Pizza!

    In response to the nutrition facts, how could fresh veggies be unhealthy with a small sprinkling of cheese and some beans? I agree that making your own refried beans might be healthier, but still… it can't be that bad.

    @Becca – thank you. I love the TB Hot Sauce the best.
    I appreciate your comments on the nutrition facts.. the only thing slightly unhealthy in this recipe is the reduced fat sour cream, the cheese (which is good for you), and perhaps the beans (also good for you) from a can. The amount I used doesn't equate to it being unhealthy for you. I don't believe anyone can blindly follow calories, it's about eating foods that are good for you, some are high in fat or in calories. Take salmon for example which is high in fat and calories, but so good for you.

    5 minutes on each side at 400 degrees burnt the crap out of my tortilla shells. So after throwing away the first batch, I turned my oven down to 350 and did 3 minutes on each side. That seemed to be just about perfect.
    The pizzas were very yummy, too! I didn't have any taco bell sauce so I used Old El Paso hot taco sauce. A little bit of work to make but worth it. And since I only made 2 pizzas, I have enough stuff for my hubby and I to have it for lunch tomorrow. 🙂

    Omigosh I love this! I am absolutely in l.o.v.e. with their hot sauce too. Not Fire, but just Hot. I make sure to grab a huge handful like it's for everyone, but really it's just for me and my fridge stockpile lol. I like to eat 2 packets on each taco. So it adds up fast. 😛 If they could bottle that stuff. Well, I know for a fact they tried and it even said restaurant recipe or style or whatever, but it wasn't quite what comes out of those amazeballs packets. If I could find a case on ebay I would so buy it. No lie. I actually had a friend work there and would bring me home their sour cream, and tortillas and such. I was almost destroyed when she quit.     Super yummy! We did switch the refried beans for shredded chicken breast though. Not a fan of the beans! We make shredded salsa chicken in the crock pot and put it in single meal portions and freeze so we always have it on hand. It was delicious! Thank you!

    I made these tonight for dinner and they were soooo yummy! I love Taco Bell's Mexican Pizza but only let myself eat it about once a year. This is a nice alternative and tasted pretty close to the original.
    And the crazy lady with her nutrition info cannot be right. I don't see how one of these would have 28 g of fat unless you add a ton of cheese to it.

      Yeah.. if my Spanish doesn't fail me, I believe you said you are Mexican and this is an insult to Mexican food and Taco Bell is also a horror. I understand where you are coming from, but most Americans love Taco Bell, and it's nice to have an affordable American-Mexican option. And for real Mexican food, most major cities will have good food.

    Amazing!!! Taste just like Taco Bell’s Mexican pizza, but so much healthier!! I used whole wheat tortilla. Only suggestion: be sure to pop the tortilla with a fork to eliminate all the air bubbles, or else it may puff up like a bhatura. Also, 8 mins in the oven was perfect for me. Enjoy!     I have been eyeing this recipe for a while now because our household loves TB’s mex pizza. Made it today and it was absolutely delicious!!! I was missing a couple of the fresh ingredients due to my limited shopping trips at this time but that didn’t affect the end result. I can’t wait to try more of Nisha’s recipes. I love that her directions are so clear. This recipe will be added to our biweekly meal rotation for sure. Will definitely make it again very very soon. Thanks Nisha!!!

    Finally the Mexican dinner night came and I saw you making pizza so voila added in Mexican pizza to the menu. Went by your directions n came perfect even though added chicken instead of beans and used multigrain tortilla Was so easy to make. Thanks again for sharing 😊

    Loved this recipe!! I used Toufayan Bakeries Gluten Free Wraps.
    Made it twice already and it was so yummy!!I was diagnosed with Celiac 10 years ago so haven’t been able to eat Taco bell so thankful for this recipe!

    Excellent delicious recipe and easy to follow the steps. I made the pizza and added chopped jalapeno to the beans to make it spicy. Plus I didn’t have scallions on hand so I added cilantro also on the topping. My husband and I really enjoyed your recipe. Thank you Nisha for sharing.👌🏼 😍 😋
