A copycat vegetarian version of the Taco Bell Mexican Pizza recipe that tastes better than the original. This Mexican Pizza is vegetarian, made with refried beans, cheese, tomatoes, scallions, and jalapenos.

Mexican Tortilla Pizza (vegetarian, 10 ingredients, gluten-free option)

Taco Bell is my absolute favorite fast-food place in the world. Oh stop, don’t judge me for it. It's a chain I have loved since the age of 14 and the older I got my affinity towards Taco Bell only grew stronger.

    Video

My favorite item to order is the Mexican Tortilla Pizza. Aside from their Mexican Pizza, my other favorite items are the Bean Burrito, 7 Layer Burrito, and Spicy Tostada.

Since I do watch what I eat most of the time, I can't afford to eat Taco Bell's fried version as often as I'd like to, however I am capable of replicating some of their delicious menu items at home.

What is Taco Bell's Mexican Pizza

Taco Bell's Mexican Pizza is two flour tortillas that are deep-fried, then layered and topped with refried beans, salsa, and cheese. The pizza is then heated up and topped with tomatoes, scallions, and jalapenos.

At Taco Bell, you can get a beef version or a vegetarian version of the pizza. Of course, since I prefer vegetarian to meat, I love the Veggie Mexican Pizza at Taco Bell.

My version of this vegetarian Mexican Pizza tastes way better than Taco Bell's version. I know, I know, it's a bold claim, but it's true. Just check out the reviews below.

Taco Bell's pizza can get soggy, and I find that half the cheese and veggies fall off, so trust me when I say my version is better, not to mention, homemade too. Hope you guys will give this recipe a try.

Mexican Tortilla Pizza (vegetarian, 10 ingredients, gluten-free option)

Ingredients for Taco Bell Mexican Pizza

Taco Bell Mexican Pizza ingredients... it's nothing complicated and to the point.

Tortillas: As much as I prefer using whole wheat, for this Taco Bell copycat, you need to use an 8" white flour tortilla. The ingredients are not great, but at least it's homemade.

Refried Pinto Beans: I used canned organic refried pinto beans from Trader Joe's and they're delicious.

Taco Seasoning: Any brand of taco seasoning works, but I love Trader Joe's as it's a little spicy.

Water: You'll need a little water to dilute the beans slightly.

White Onion: You'll need some chopped white onion for the beans, yes we are adding some flavor to the beans.

Pizza Toppings: Tomatoes, Jalapeno, Scallions, Mexican Cheese, Salsa. You'll need all the ingredients for the pizza toppings.

Why You'll Love Taco Bell Mexican Pizza

    • It's delicious
    • Crunchy & Cheesy
    • It tastes way better than Taco Bell's Mexican Pizza
    • Satisfying & Comforting
    • It's Baked, NOT Fried
    • Because homemade is better
    • Gluten-free option (use gf tortillas)

Mexican Tortilla Pizza (vegetarian, 10 ingredients, gluten-free option)

How to make Taco Bell Mexican Pizza recipe

Step 1 - Bake the Tortillas

    1. Preheat the oven to 400 degrees. Line a tray with foil.

    2. Place 2 tortillas on a flat surface and lightly brush both sides of the tortilla with avocado oil. Prick the tortillas with a fork - this prevents them from puffing.

    3. Once preheated, put the tray in the oven. Bake for 11 minutes total, 5 ½ minutes on each side - so flip halfway. You can add multiple tortillas at a time.

    4. Tortillas are done.

Step 2 - Make the Beans & Chop Veggies

    1. In the meantime, make the beans. Empty the contents of the refried beans into a pot and cook on medium heat.

    2. Add ¼ - ½ cups of water and taco seasoning. Do not add salt since the taco seasoning has enough salt.

    3. In the meantime, chop an onion. Add the onion to the beans. Once heated through, turn off the stove.

    4. Chop the tomatoes, scallions, and jalapenos. Set cheese aside.

Step 3 - Assemble Mexican Pizza

    1. Spread a couple of dollops of beans over the tortilla.

    2. Top off with a little salsa and spread. Use your favorite salsa, or even Taco Bell sauce will work.

    3. Place the second piece of tortilla on top.

    4. Now top with salsa again. Spread.

    5. Top with scallions, tomatoes, and jalapenos.

    6. Top with cheese, make sure you get the sides.

    7. Place the Mexican Tortilla Pizza back on the foiled tray and into the oven at 400 degrees for about 5 minutes. Check after 3 minutes.

    8. Mexican Pizza is ready. Cut into 4 pieces and serve hot with Taco Bell sauce. You can also garnish with onions, cilantro, or sour cream. Enjoy!

    Serving Suggestions

    Serve the Mexican Pizza with:

    • Taco Bell Sauce, of course... hot, mild, or fire. I prefer hot.
    • You can also serve it with Guacamole and sour cream.
    • A side of Mexican Rice with lettuce would also be delicious.

Tips on making Baked Taco Bell Mexican Pizza

    • First, prepare the refried beans.
    • Prep all the ingredients you'll need for this recipe. - scallions, jalapenos, tomatoes, and cheese.
    • Next, prepare the tortillas by brushing them with oil and baking them in the oven, flipping them halfway.
    • Assemble your Mexican Pizza.
    • Bake it in the oven for a few minutes until the cheese has melted. Enjoy!

    FAQ

    1. How do you make a crispy tortilla without deep frying?

You could say, my version is a healthy Taco Bell Mexican Pizza.

    Here's how I make it:
The key is to brush a little oil on the tortilla and then bake both sides. This results in a crispy outer shell.
Once done, proceed to layer the Mexican Pizza and then bake again.
This makes a great dish to celebrate Cinco De Mayo!

    2. Can I make the Taco Bell Mexican Pizza recipe in the air fryer?

Absolutely! Although I don't own a good air fryer, I would air fry these Mexican Pizzas at 375 for 8 minutes. Check on it. Then add more time if you need.

    3. How do you prevent Mexican Pizza from getting soggy?

Make sure your beans are not super liquidy, it's okay for the beans to be runny, but avoid them getting so liquidy that your tortillas become soggy. Also, spread some salsa over the beans, but don't go overboard so that the tortillas get soggy.

    4. Is Taco Bell Mexican Pizza gluten-free?

No, this homemade version of Taco Bell's Mexican Pizza is not gluten-free. I used flour tortillas for this recipe as they're soft.

For a gluten-free option, feel free to use your favorite gluten-free tortillas, just make sure they're soft for the best results.

    5. How can I make vegan Mexican Pizza?

Simply replace regular cheese with vegan cheddar cheese and you've got yourself vegan Mexican Pizza.

    6. How many calories are in Taco Bell Mexican Pizza?

My homemade version of the Taco Bell Mexican Pizza version is baked (not fried) with 495 calories per serving. I did use larger flour tortillas for this recipe.

    7. How can I make healthy Mexican Pizza?

For a healthy alternative, use whole-wheat tortillas instead of white flour tortillas. Also, you can use low-fat cheddar cheese.

    8. Did Taco Bell discontinue Mexican Pizza?

Yes, they did, but as of May 19, 2022, the Mexican Pizza is now back at Taco Bell. I still love my healthier baked version 100 times more than Taco Bell's because it does not get soggy and I don't skimp on the ingredients.

Any idea on how to avoid the air bubbles in the tortillas? Made these tonight and they were super yummy, but the air bubbles made the tortillas a little hard to work with...

@Christian - How long did you bake the tortillas for the first time? And the second time? Perhaps reduce the amount of time you baked the tortillas the first time.

@Anonymous - You probably didn't bake the tortilla long enough. When you removed it from the oven was it flimsy or crispy? Second, perhaps you put too much sauce. Those are really the only 2 reasons. Sorry about that.

Did you brush oil on both sides? Did you add a lot of oil?
Did you place the tortillas in the oven for 5 minutes on each side? If it wasn't crisp, did you leave it in longer? Oven should be at 350 degrees F.
      Let me know.

So I'm always curious why food bloggers never include nutrition facts in their blogs. After entering in everything you listed in your ingredients, I understand why. Food Bloggers don't want to know how terribly they're eating. Here, let me help you out. Each one of these pizzas has 646 Calories, 28g Fat, 55mg Cholesterol, 1465mg Sodium (that's like 80% of your recommended daily sodium intake), and 24g Protein. I don't care how good these are, there's a reason healthy people tend to stay away from fast-food joints.

@Anonymous - FYI.. on my dessert section, I make sure to include the Nutrition Facts. I also focus on making desserts that range from Low-Fat to Full Fat.
In regards to this recipe, had I eaten this at taco Bell, I may have believed your nutrition facts, but since I made this at home and used mostly vegetables, some cheese, I really don't believe the nutrition on this pizza is 646 calories.
The whole point of this post is to make a healthier version of Taco Bell's Mexican Pizza!

Haha great idea! Can't wait to try this later tonight. And yes, we have more packets of taco bell Fire Roasted Tomato hot sauces than I'd like to admit, they'll go great on top 🙂

In response to the nutrition facts, how could fresh veggies be unhealthy with a small sprinkling of cheese and some beans? I agree that making your own refried beans might be healthier, but still... it can't be that bad.

@Becca - thank you. I love the TB Hot Sauce the best.
I appreciate your comments on the nutrition facts.. the only thing slightly unhealthy in this recipe is the reduced fat sour cream, the cheese (which is good for you), and perhaps the beans (also good for you) from a can. The amount I used doesn't equate to it being unhealthy for you. I don't believe anyone can blindly follow calories, it's about eating foods that are good for you, some are high in fat or in calories. Take salmon for example which is high in fat and calories, but so good for you.

      Thanks, appreciate your comment!!!

5 minutes on each side at 400 degrees burnt the crap out of my tortilla shells. So after throwing away the first batch, I turned my oven down to 350 and did 3 minutes on each side. That seemed to be just about perfect.
The pizzas were very yummy, too! I didn't have any taco bell sauce so I used Old El Paso hot taco sauce. A little bit of work to make but worth it. And since I only made 2 pizzas, I have enough stuff for my hubby and I to have it for lunch tomorrow. 🙂

Thank you for the tips! My family has tried making Mexican pizzas as good as Taco Bell for years and my mom has been frying the tortillas. This was sooo much better!

Omigosh I love this! I am absolutely in l.o.v.e. with their hot sauce too. Not Fire, but just Hot. I make sure to grab a huge handful like it's for everyone, but really it's just for me and my fridge stockpile lol. I like to eat 2 packets on each taco. So it adds up fast. 😛 If they could bottle that stuff. Well, I know for a fact they tried and it even said restaurant recipe or style or whatever, but it wasn't quite what comes out of those amazeballs packets. If I could find a case on ebay I would so buy it. No lie. I actually had a friend work there and would bring me home their sour cream, and tortillas and such. I was almost destroyed when she quit. I seriously had my own TBell franchise. Sorta. I am so making your recipe here tonight for supper. And your newest twitter follower 🙂 @NewMommiezBlend

@Mommiez Blend - Thanks!!! I love TB's HOT sauce too, not Fire, I hate fire! Your comment is hilarious.. if I had a friend who worked at TB, I'd be so overweight, no joke! I love TB, and I make sure to treat myself once a month when I run my errands in the suburbs. Thanks for the follow on Twitter. 🙂

Super yummy! We did switch the refried beans for shredded chicken breast though. Not a fan of the beans! We make shredded salsa chicken in the crock pot and put it in single meal portions and freeze so we always have it on hand. It was delicious! Thank you!

I made these tonight for dinner and they were soooo yummy! I love Taco Bell's Mexican Pizza but only let myself eat it about once a year. This is a nice alternative and tasted pretty close to the original.
And the crazy lady with her nutrition info cannot be right. I don't see how one of these would have 28 g of fat unless you add a ton of cheese to it.

Yeah.. if my Spanish doesn't fail me, I believe you said you are Mexican and this is an insult to Mexican food and Taco Bell is also a horror. I understand where you are coming from, but most Americans love Taco Bell, and it's nice to have an affordable American-Mexican option. And for real Mexican food, most major cities will have good food.

Amazing!!! Taste just like Taco Bell’s Mexican pizza, but so much healthier!! I used whole wheat tortilla. Only suggestion: be sure to pop the tortilla with a fork to eliminate all the air bubbles, or else it may puff up like a bhatura. Also, 8 mins in the oven was perfect for me. Enjoy! Thanks Nisha for another great recipe!

I have been eyeing this recipe for a while now because our household loves TB’s mex pizza. Made it today and it was absolutely delicious!!! I was missing a couple of the fresh ingredients due to my limited shopping trips at this time but that didn’t affect the end result. I can’t wait to try more of Nisha’s recipes. I love that her directions are so clear. This recipe will be added to our biweekly meal rotation for sure. Will definitely make it again very very soon. Thanks Nisha!!!
