Copycat Taco Bell's 7 Layer Burrito is better than the real thing. This burrito is vegetarian and packed with so much flavor.
Taco Bell is my all-time favorite fast food so when you're missing your favorite fast food during quarantine life, just make it. My absolute favorite item to order at Taco Bell is the 7 Layer Burrito, it's vegetarian, delicious, and gooey, what's not to love?
Aside from the 7 Layer Burrito, I'm a huge fan of their Mexican Pizza which I have a copycat version of already. I also love their Bean & Cheese Burrito,Fiesta Veggie Burrito, and discontinued Spicy Tostada.
I have the Taco Bell Copycat SpicyTostada recipe on my blog. I still need to create recipes for the Taco Bell Bean & Cheese burrito and the insanely good Taco Bell Fiesta Veggie Burrito with creamy chipotle sauce. For now, I hope you try out this delicious homemade and copycat version of the 7-Layer Burrito at home.
How to order the 7 Layer Burrito at Taco Bell?
The 7 Layer Burrito has been discontinued at Taco Bell, however there is a workaround.
Here's how I order it on the Taco Bell app:
- Order the Burrito Supreme (this has beef & beans).
- Get it without beef.
- Add Guacamole.
- Add Seasoned Rice.
- Get it Grilled.
- And that's it. There's your customized 7 Layer Burrito that you'll end up paying $2 extra for. 🙂
Ingredients for 7 Layer Burrito
- Mexican Rice - This recipe is super easy. You will just need oil, garlic, onions, tomatoes, rice, tomato paste, and basic spices. It can be made in the Instant Pot - recipe below.
- Refried Beans - I use canned refried beans and flavor it up with taco seasoning, onions, and Taco Bell Hot Sauce. It's so good.
- Guacamole - You can use store-bought, but I just make my own and it's so worth it. Recipe below.
- Flour Tortillas - For the best results, use Mission Large White Flour Tortillas - the ingredients are not good, but this is the best brand on the market with soft large burrito tortillas.
- Sour Cream
- Tomatoes
- Pepper Jack Cheese - I like Pepper Jack Cheese, but you can also use Cheddar Cheese, Mexican Cheese Blend, or Colby Cheese.
- Lettuce - Use store-bought shredded lettuce or thinly chop lettuce.

How to make the Taco Bell 7 Layer Burrito recipe step by step?
Make the Mexican Rice
1. Chop the garlic. Chop the onions - enough for the rice and beans, about 1 ¼ cups.
2. Chop the tomatoes.
3. Heat up the Instant Pot on Saute mode. Once hot, add oil followed by garlic. Saute for about 20 seconds.
4. Add onions and saute until translucent for 2-3 minutes.
5. Add the washed & rinsed rice. Toast for a couple of minutes.
6. Add chopped tomatoes and tomato paste.
7. Stir well. Turn off Saute Mode.
8. Add water and salt, cumin, and chili powder. Stir. Make sure you really scrape the bottom of the Instant Pot so nothing sticks.
9. Seal Instant Pot and cook the rice on High Pressure for 5 minutes. Natural Release after 10 minutes.
10. Mexican Rice is ready.
Prepare the Refried Beans
1. While the rice cooks, prepare the beans. Heat up a pot on medium heat, once hot, add oil followed by the remaining onions you chopped up earlier. Saute for about 3 minutes - until the onions are translucent.
2. Dump all the refried pinto beans into the pot.
3. Stir the beans around.
4. Add Taco Bell Mild Sauce (their Hot Sauce works too). Mix.
5. Add taco seasoning.
6. Let the beans heat up. Once hot, turn off the stove. Your beans are ready.
Prep remaining ingredients + Make Guacamole
1. Chop the lettuce and tomatoes.
2. Shred the Pepper Jack Cheese.
3. To make the guacamole - combine avocado, red onions, cilantro, garlic, serrano chili, lime juice, and salt.
4. Stir to combine. Set aside.
Assemble the 7 Layer Burrito
1. Heat up a cast iron skillet on medium heat. Place the tortilla on the stove and cook on both sides, about 1 minute on each side. Just warm it through. Turn off the stove.
2. Place the warm tortilla on a plate.
3. Top with refried pinto beans.
4. Top with Mexican rice.
5. Now add sour cream and spread it out the best you can.
6. Add lettuce all over.
7. Top with shredded cheese.
8. Add guacamole and spread it out.
9. Top with tomatoes.
10. Fold the burrito by taking the sides and folding it in and then wrapping the burrito.
11. Spray the pan with avocado oil spray, and gently place the flap side of the burrito face down. Cook for 3 minutes or until golden brown.
12. Flip. Cook the burrito on the other side for a couple of minutes until golden brown.
13. Split the burrito in half and serve with your favorite Taco Bell Sauce.
Tips on making Taco Bell 7 Layer Burrito
- tortilla: This is the worst part of this recipe since I used Mission Foods' white flour tortilla which is heavily processed. Unfortunately, this is the only brand I could find at the time. Use your favorite tortilla wrap, a whole wheat wrap would work well, and one that's about 10 inches in diameter. I love La Tortilla Factory brand.
- beans: Try to use refried pinto beans for this recipe, however refried black beans would work well too.
- guacamole: Prepare fresh guacamole with just a few simple ingredients.
- cheese: I used shredded Pepper Jack Cheese in this recipe, however shredded cheddar cheese or a Mexican blend would work well too.
- burrito: When you assemble the burrito, use the recommended amounts for the 7 layers else you won't be able to close your burrito. You can use less or more of each of the 7 layers.
- Taco Bell sauce: If you can't find Taco Bell sauce, use Trader Joe's Spicy Taco Sauce which is pretty exact, otherwise just use your favorite jar of salsa you have on hand.

LOVE THIS! This was so quick and easy to make for my family! The instructions are soo helpful, definitely, the pictures provided. Totally recommend this if you are a Taco Bell fan, my parents thought it was even better than the ones we get from there. Also, we prepped a little extra of everything so we can make the chipotle bowls this week 🙂
Ramya says
At first with the amount of layers to make it seemed daunting but as I went through the instructions it was a lot easier! The recipe is super simple and tastes excellent! I did have a ton of extra rice but I plan to use that as lunch for later in the week ? Also, I replaced sour cream with greek yogurt to make it a little healthier. So glad I tried this delicious recipe.

This was an epic 7 layer burrito , very easy to follow steps and so very delicious . My only favourite thing at Taco Bell is 7 layers and nothing beats making it yourself at home !! Loved this recipe ! Totally recommend everyone to try it out !! Thanks
Neha says
The recipe sounds so yummy so I decided to make it! It was a total hit. The only thing that went wrong was my rice in the IP burned. Did this happen to anyone else? I added the amount that was called for.
honeywhatscooking says
Hi Neha.
When making the rice did you make sure to scrape the bottom before closing the lid. You can't have anything like the onions and garlic sticking to the bottom. Sorry about that. I will mention this in the recipe. Thank you for making this. xoxo

This was a relatively simple recipe that was a huge hit with the entire family. That includes a picky husband and even pickier two children when it comes to healthy food. 🙂 They said this was much better than any mexican burritos they've had including Taco Bell 🙂 Thanks for this quick go to that's a winner with the whole fam!

SHE STRIKES AGAIN.
This recipe is simple to make because she takes the time to give you details! Follow what she says and you’ll have a true crowd pleaser!
Only mistake I made was putting too much garlic in the guac but it was fine in the end
Also the Trader Joe’s taco sauce tastes like someone jacked the Taco Bell sauce recipe. A+
Thank you!

Natasha Mascarenhas says
this was really really delish, and felt like a professional DIY taco bell (who would've thought that could exist). the rice came out a bit watery (still fully cooked) but we left it on sautee mode uncovered and that was fixed in five min. definitely the star of the dish -- and the refried beans are amazing too
Aasheekaa says

Vickie Fisher says
So, I made this! I love all your meticulous steps; they made the process less intimidating. This was so wonderful, I didn't even bother putting in the lettuce!
Thanks much!
P.S.: I saw a comment from a lady who said she had problems with her rice sticking. Sometimes when I make Spanish rice, I will make the rice plain (separate) and make a separate saucy tomato mixture in another pan. Then, after my rice has sat a little still covered, I will spoon it into the tomato mixture and toss gently.
honeywhatscooking says
Thanks Vickie. I'm so glad to hear that. I think this version is better than Taco Bell. 🙂
