With over 14 grams of protein in just half a cup, it’s one of my favorite ways to sneak in extra protein throughout the day. Whether it’s breakfast, lunch, or snack time, this versatile ingredient always comes through.

Growing up, we always had a tub of cottage cheese in our fridge – thank you, Costco. When my family first moved to America, my mom would throw together quick meals, and one of her favorites was a baked potato topped with cottage cheese, crushed saltine crackers, loads of Italian seasoning, Catalina dressing, and Tabasco. I know, lol, but that nostalgic little recipe is etched in my memory.

These days, I use cottage cheese in way more balanced (and flavorful) ways – like folding it into scrambled eggs, blending it into my 15-Minute Banana Bread Pancakes, or swapping it in for ricotta in dishes like my Vegetable Lasagna and Sun-dried Tomato Ricotta Crostini. If I’m craving something savory, I’ll spread it over toast and top it with everything bagel seasoning, chili oil, or a little green chutney for an Indian twist.

  1. Cottage Cheese – I love Good Culture’s 2% cottage cheese – it’s so good. I’ve tried other brands, but Good Culture is the best due to the soft curds. You can find it at Whole Foods or Sprouts.
  2. Sourdough Bread – Grab a slice of your favorite sourdough. Here I’m using sourdough bread with olives. Feel free to use whole-wheat bread or any other type of bread you prefer.
  3. Green Chilies – If Thai green chilies are too spicy, use chopped jalapenos.
  4. Bhel Mix – For an Indian twist, add your favorite bhel mix.

Let’s Make Indian-inspired Cottage Cheese Toast on Sourdough

Prepare Cottage Cheese Mixture

Step 1. In a mixing bowl, combine cottage cheese, red bell pepper, red onions, cilantro, and green chilies.

Step 2. Add chat masala, kala namak (Himalayan pink salt), and black pepper. Mix well.

INGREDIENTS 

  • 1 slice sourdough bread, toasted, see Note 1
  • 1/2 cup of cottage cheese, reduced-fat
  • 1/4 cup red onions, chopped
  • 1/4 cup red bell pepper, chopped
  • 2 tbsp cilantro, chopped
  • 1 green chili, chopped
  • 1/8 tsp chat masala
  • 1/16 tsp pink salt
  • black pepper to taste
  • squeeze of lemon juice
  • 2 tbsp bhel mix
  • 1 tsp pumpkin seeds
  • sprinkle of red pepper flakes
