Aloo Masala Kati Roll | Sautéed Spicy Potatoes wrapped in a Roti (vegan)

Aloo Masala Kati Roll: A healthy, versatile Indian wrap perfect for a snack or quick meal. 

This past weekend, we’ve all been a bit apprehensive about Hurricane Sandy hitting the Northeastern coastline of the United States.  In the event this hurricane turns out to be a lot worse than we all imagine, I prepared a bunch of dishes in advance so we would have enough food for the next few days. 
One dish I prepared was this Aloo Masala Kati Roll.  Kati Rolls have gained immense popularity in New York City and other major cities around the world. 

This brilliant concept is similar to that of a Mexican Burrito if you will.  Traditionally, the contents of a Kati Roll are made to be filled within a paratha, an Indian flatbread that is pan-fried with oil or butter.  However, since I am taking a healthier approach to this creative dish, I opted to use a roti, an Indian bread cooked on a hot pan, instead of a paratha. 

Additionally, since I’m not too keen on making homemade rotis, chapatis, or parathas, I picked up a packet of freshly made rotis from my local Indian grocery store.  If you don’t have one in your area, feel free to use a Whole Wheat Mexican Wrap or Indian Naan which can be found at most grocery stores, such as Whole Foods or Trader Joe’s.

Lastly, I made this super quick Cilantro Chutney to drizzle over the potatoes; a Mint Chutney would work just as well. 

This is a great meal to take on-the-go, and it’s incredibly easy to make. It works as a main dish, small meal, or guilt-free midnight snack (I won’t tell). Enjoy!

how to make aloo masala kati roll step by step?

Prepare/Cook the Filling

Start by chopping the garlic, ginger, and onion.

Heat a pan on medium heat.  Once hot, add oil, and add mustard seeds and asafoetida.  Once the mustard seeds splutter…

Add the cumin seeds and turmeric powder. Stir. After about 10 seconds…

Add the garlic, ginger, and onion. Season with salt. Stir and allow this to cook for 5 minutes on low-heat (dial #3), or until the onions are golden-brown – about 5 minutes.

In the meantime, chop the tomatoes into small cubes

Once the onions are golden brown…

Add the chopped tomato along with salt, red chili powder, and coriander powder.

Stir.  Cover with a lid.  Allow this to cook for about 8 to 10 minutes on medium heat.  Stir once in between to prevent the tomatoes from sticking.

In the meantime, peel 2 potatoes and slice into small cubes.

This is what the onion-tomato mixture should look like.  Notice all the water is evaporated and you are left with a paste-like consistency.

Add the cubed potatoes.  Season with salt. 

Stir to combine.  Cover with a lid and cook for 20 minutes on low heat (dial #3).  Stir every 4 minutes or so to prevent the potatoes from sticking to the bottom of the pan. 

In the meantime, make the Cilantro Chutney using this recipe – I omitted the coconut.  Set aside.

Back to the potatoes… this is what you should have after 20 minutes.

Add about a 1/4 cup of water to scrape all the goodness at the bottom of the pan.  Stir.  Cover with a lid and cook another 5 minutes.  Turn off the stove. 

Assemble

At this time toast (yes, toast) 2 rotis for about 5 minutes.

Top the roti with potatoes and drizzle a little cilantro chutney. Optional – garnish with cilantro.

Roll into wraps and enjoy.  Pretty Uh-mazing, huh?

Ingredients

  • 2 tbsp sunflower oil
  • 1/2 tsp mustard seeds
  • pinch asafoetida/hing
  • 1/2 tsp cumin seeds
  • 1/2 tsp tumeric powder

  • 1 inch piece ginger chopped
  • 1 medium red onion finely chopped
  • 1 large tomato chopped
  • 1 tsp red chili powder (use 1/2 tsp for a more mild result)
  • 2 tsp coriander powder
  • 2 potatoes peeled and cubed
  • salt to taste
  • 1/4 cups water
  • fresh cilantro for garnish, finely chopped
  • rotis/chapatis store-bought or homemade
  • cilantro chutney homemade

Instructions

Notes

  • customize the dish to your taste using different veggies
  • sub out the roti for a wrap or naan for some variety

    Glad to see you back, Nisha! I love kathi rolls, especially chicken (naturally without the cilantro)! Your recipe looks yummy…sometimes I like to spread some yogurt on the wrap before adding the filling.

Before I became a mom, the idea of changing diapers and spit-up grossed me out. Now, no biggie. I can’t even count on one hand how many times I’ve put my baby to sleep and I get so excited to have some “me time”. To my disappointment, he wakes up 1/2 hour later and I have to start the process all over again… is he burped, is he wet, is he hungry? The days are long!

Despite the hardships of motherhood, one of the greatest joys has been watching and holding my baby while he sleeps, and knowing I provide comfort to him like no other. I’m sure he will get used to it and I’ll probably regret it later on, but for now, I am just soaking up these precious moments while he’s still little and innocent. ☺️⁠

Simply cube brioche bread slices, whisk the egg batter, add the bread to the batter, and bake it in the oven. Finish with a dusting of powdered sugar and top with maple syrup. So good. BAKED STRAWBERRY FRENCH TOAST
🔺INGREDIENTS
4 eggs
1 1/2 cups whole milk
2 tbsp sugar
2 tbsp light brown sugar
2 tsp vanilla
1/4 tsp salt
1 cup strawberries, sliced
8 slices @stpierrebakeryus brioche bread, 1-inch cubes
1 tbsp sugar, for topping
Powdered sugar, for garnish
Maple syrup, for garnish

🔺DIRECTIONS
1. In a large mixing bowl, whisk the egg mixture together - eggs, milk, sugar, light brown sugar, vanilla, and salt.
2. Cube 8 slices of brioche bread - this should yield roughly 5 cups.
3. Transfer the brioche bread into the egg mixture. Make sure the bread is well-coated. 
4. Spray a 7” x 11” x 2” deep baking dish with coconut oil. 
5. Add half the brioche bread egg mixture into the baking dish.
6. Top with all the sliced strawberries.
7. Top with the remaining brioche bread egg mixture.
8. Cover with a plastic wrap and refrigerate for 30 minutes to 2 hours.
9. Top baking dish with 1 tbsp of sugar.
10. Place in the oven for 60 minutes or until the top is golden brown.
11. Serve hot. Top with powdered sugar and maple syrup. #brunch

4. An Hour Before Serving - Assemble.- Bake dish with pasta, top with marinara, and cheese. Bake for 35 minutes.⁠
