This 15-minute Scrambled Tofu Fried Rice comes together quickly, making it the perfect lunch or weeknight dinner. It’s vegan and contains tofu, frozen brown rice, and green chickpeas, with Asian flavors. Delicious and customizable.

15-minute Scrambled Tofu Fried Rice
I love making quick, easy, and balanced lunches, and this tofu fried rice kinda came out of nowhere. With the recent egg shortage, I wanted to whip up my usual egg-fried rice but had to get creative. That’s when I thought of using tofu instead, and honestly, I might love this version even more!
This dish is a simple twist on classic egg-fried rice, using similar ingredients. It’s easy and satisfying, made with crumbled tofu, brown rice, and frozen green chickpeas. And the best part? There is no major chopping – just scallions!

What Kind of Tofu Should I Use?
In this recipe, I recommend using sprouted tofu, which tends to be higher in tofu and easier to digest than regular tofu. I purchase sprouted tofu at Trader Joe’s.
If you can’t find sprouted tofu, use extra-firm or firm tofu.
Furthermore, since tofu is processed, I stick to the organic kind. Also, press the tofu for 5 minutes before cooking to remove extra moisture.

Ingredients & Substitutions

- Tofu: Use sprouted tofu, which is easier to digest than non-sprouted. Alternatively, you can use extra firm tofu, which works great. Using a Tofu Press, press the tofu for 5 minutes to remove the extra liquid before cooking.
- Frozen Brown Rice: For the best results, use frozen brown rice or day-old cold rice. I get my frozen brown rice from Trader Joe’s, and it’s just one ingredient. Alternatively, you may also use white rice or quinoa.
- Frozen Green Chickpeas: I used frozen green chickpeas from Sprouts. If you don’t have access to this, frozen green peas would be the next best option with similar nutrition + look & feel.
- Chili Crunch Oil: My favorite brand is Momofoku Chili Crunch – it’s spicy and delicious. You may also use Trader Joe’s chili onion crunch or your favorite chili oil from the Asian grocery store.

15-minute Scrambled Tofu Fried Rice
INGREDIENTS
- 1 tsp avocado oil
- 3.8 ounces sprouted tofu, I like Trader Joe’s Organic
- 3/4 cup frozen brown rice, I like Trader Joe’s Organic
- 1 cup frozen green chickpeas, I like Sprouts Organic or use green peas
- 1 1/2 tsp garlic powder
- 1 tbsp chili crunch, I like Momofuku
- 1 tbsp soy sauce
- pinch of salt
- 1/2 cup scallions, chopped
INSTRUCTIONS
- Press Tofu & Saute. Press the tofu for 5 minutes before beginning. Heat a nonstick pan on medium heat Once hot, add oil, followed by the crumbled tofu – crumble with your fingers. Scramble tofu for 5 minutes. Once sauteed, the tofu should be slightly golden brown.
- Add Rice & Veggies. Add frozen brown rice and frozen green chickpeas. NOTE: You may also use day-old rice and/or frozen green peas. Saute for a minute.
- Add Sauces & Spices. Add soy sauce, chili crunch oil, and garlic powder. Saute for a couple of minutes. Now add chopped scallions and cook for another 2 minutes. Turn off the stove. Your tofu fried rice is ready. Serve in a pretty bowl and enjoy!
