Tandoor Chef contacted me this month to create a recipe for one of their popular burgers. Here is a preview!
After trying a few different toppings on the burgers, I (with the help of the hubbs) decided we liked the burger served with Coriander Coconut Chutney the most.
So here is part 1 of this post, making the Coriander Coconut Chutney. This is the hard part.
In reality though, it’s quite simple, actually. Give it a try, you can do it! Part 2 of this post along with the burger I’m reviewing is coming tomorrow! Stay tuned!
NUTRITION: Cilantro is a good source of Vitamin C and contains small amounts of Vitamin E. Coconut is high in saturated fat, however it does contain a decent amount of Protein and Fiber. Lime is an excellent source of Vitamin C.
INGREDIENTS:
- Garlic – 1 clove
- Lime – Juice of 1 lime
- Fresh Cilantro – 1 bunch
- Dry/Fresh Coconut – 1 tbsp …I used dry
- salt to taste
- Red Chili Powder – 1/8 tsp …(you can use Paprika or Crushed Pepper Flakes instead)
DIRECTIONS:
1. Here is what you’ll need.
2. Add a clove of garlic to a Magic Bullet / Food Processor. Juice the lime.
3. Add the cilantro.
4. Add coconut.
5. Blend. You can add some water to get things moving or shake the bullet around a bit in between. A Food Processor will always work better. ๐
6. Add salt and red chili powder.
7. It’s sooooooooooooo delicious! You can use this chutney on sandwiches, serve it with samosas, or simply eat it with rice.

Oooh this looks good. Have to try it since I love anything coconut. My mom makes coconut chutney for idlis and sometimes she adds mint for extra flavor but I don't think she's made it quite like this before. Thanks for posting.
