    The Ultimate "Healthy" Veggie Burger Sandwich... with a secret ingredient! Shhhh...

    I went for my Zumba class today.  Initially it was all fun, but after 15 minutes I started eyeing the clock.  Is it just me or do other people find working out boring?  The only reason I participate in these classes is to switch up my routine and make working out more exciting.  Despite my attempts, I found Zumba boring today and I was happy when the class was over - 45 minutes that really kicked my butt.  Regardless, exercise is good for your mind, body, and soul, so I'm gonna keep doing it no matter how bored I get.  πŸ™  

    Anyway, today I made the Ultimate Veggie Burger - that is the name I gave my sandwich because I do believe it is ultimate!  STORY... I usually go to this coffee shop around the corner where this guy makes the best $1 coffee and the best veggie burger.  It's soooooooooooo good.  I once asked him if he added horseradish to the veggie burger and he said, "no, it is mustard."  WOW!  How could a foodie wannabe like myself not have detected that?  OMG, that is the secret ingredient, mustard, not honey mustard, just regular mustard!  In addition to mustard, he also adds mayo and ketchup to the sandwich... that part I figured out because I dissected the sandwich apart. 

    Today I rocked my Veggie Burger Sandwich with a little mustard, a combo of ketchup and mayo, and without cheese.  Trust me, you won't miss the cheese because I added some fresh cilantro to my special ketchup-mayo sauce which added tons of flavor to this sandwich.  All my husband kept saying was, "You are the best.  I'm so lucky to have you.  Thank you for a great meal!"  And I responded, "Yes, I know!"  πŸ™‚  Tell me you love it! 

    Enjoy your weekend, I'm off to DC!  Any recommendations on where to eat?  My mind's always on food!  Hehe!

    TELL ME: Do you enjoy exercising or is it something you just do to stay fit and healthy?

    NUTRITION: I used Dr. Praeger's California Veggie Burger which is super healthy and has high amounts of protein, fiber, and Vitamin A.  Romaine Lettuce is an excellent source of Vitamin A, C, K, and Folic Acid.  Tomatoes are a good source of Vitamins A and C.  Choosing a whole wheat/grain bread will add a little more protein and fiber to this sandwich. 

    INGREDIENTS:

    • Dr. Praeger's California Veggie Burger - 1
    • Romaine Lettuce - handful
    • Tomatoes - 1 (sliced into rings)
    • Onion - 1 (sliced into rings)
    • Sweet/Regular Pickles
    • French's Yellow Mustard - Β½ teaspoon (more or less)... secret ingredient

    For the Ketchup-Mayo-Cilantro Sauce:

    • Light Mayo - 1 dollop (see below)
    • Ketchup - 1 dollop (see below)
    • Cilantro - 1 tablespoon (chopped)
    • Black Pepper - to taste
    • Water - Β½ tablespoon (to help dilute the sauce)

    DIRECTIONS:  
    1. Begin by cooking your burger on the stove or toaster oven.  I just used a stove, I feel it tastes better and it's quicker.  Take a nonstick pan on medium heat, you do not need to add any oil/butter, just place the burger and keep checking to see when to flip.  Should take about 5 minutes tops.

    It broke!  πŸ™

     

    2. Also toast/grill your bread.  Again, I just used the stove.

    3. Get your veggies together.  Here is what you'll need.

    4. Slice the onions and tomatoes.  The lettuce and pickles should require no effort.

    5. Here are the sauces you will need.

    Make the Ketchup-Mayo-Cilantro sauce.

    6. Take a dollop of light-mayo.

    7. Take a dollop of ketchup.

    8. Combine.

    9. Add cilantro.

    10. Add black pepper and a little water.

    Now assemble.

    11. Take a slice of bread.

    12. Add romaine lettuce.

    13. Add tomatoes.

    14. Add onions.

    15. Add the veggie burger.

    16. Spread some mustard.

    17. Add pickles.

    18. Add the yummy Ketchup-Mayo sauce.

    19. Top with bread.

    20. Doesn't that look like a heaven of healthy goodness?  It tasted that way too!

    21. Slice in half!

      I'm going to have to give this a try.

      I started exercising again last week using Wii fitness games. I generally enjoy it, but I find running really boring when I use EA Sports Active. Running on Wii Fit Plus is more fun. I couldn't go to a gym, though, I find that excruciatingly dull. As soon as the weather plays along, I'd love to go running on the beach.

      Thanks Prazzie... I was thinking about getting Wii Fit, but wasn't sure. It may not be a bad investment for those lazy cold winter days of going to the gym. Hope you enjoy this sandwich.

      i'm not always very creative when it comes to veggie burger toppings, but this looks great πŸ™‚ also sorry it broke on you πŸ™ that happens to me a lot too. i microwave them and when i flip them sometimes they fall apart. it's so sad hehe.
      i'll admit that i don't really enjoy exercise. when i do i feel great and am glad i did it, but eventually i get lazy and just stop doing it. and then i dread the day i start again, it's a crazy cycle, really πŸ˜›

      This was amazing. Luckily, I had Dr. Praeger's on hand. I didn't have fresh cilantro, so I used fresh basil instead and it tasted great. I would love to try it with cilantro, though.
