    Avocado + Caramelized Red Pepper & Onion Sandwich

    My family is blessed with all girls and one boy, but today I wanna welcome my cousin's baby boy (my nephew) who arrived into the world earlier today.  I can't wait to meet you little one... you're life is going to be filled with so much love and so much joy.  Love, hb!

    Anyhow, once my avocado finally ripened, I sautéed some red bell peppers and onions until they were caramelized, you know, when everything gets all nice and golden brown and sweet.  Oooohhhhh.avocado   caramelized red pepper & onion sandwich 087

    And to that I added some cilantro.  And some buttery, creamy avocado.avocado   caramelized red pepper & onion sandwich 095

    NUTRITION: Avocados are rich in Antioxidants and are a good source of Fiber, Folic Acid, and Vitamins B6, C, E and K.  In addition, they help lower cholesterol and contain anti-cancerous properties.  Bell Peppers are a great source of Vitamins A, B6, and C.  Whole Wheat Bread adds Fiber and Protein to this sandwich. 

    INGREDIENTS (makes 2 sandwiches):

    • Garlic Infused Extra Virgin Olive Oil – 1 tablespoon
    • Crushed Red Pepper Flakes – 1 teaspoon (use less if you can’t handle heat)
    • Onion – 1 medium (sliced)
    • Red Pepper – 1 medium (sliced)
    • Salt – ⅓ to ½ teaspoon
    • Black Pepper – ¼ teaspoon
    • Fresh Cilantro Leaves – small handful or 2 tablespoon (chopped)
    • 100% Whole Wheat Bread – 2 slices per sandwich
    • Avocado – 1 (sliced)
    • Fresh Lime – just a squirt for the avocado.



    DIRECTIONS:
    1. Start by slicing the onion and red pepper.
    2. Heat a pan on medium heat, once hot, add oil and crushed pepper flakes.
    3. After 5 seconds or so, add the onion and red pepper.  Toss. 
    4. Season with salt and black pepper.  Toss.  Sauté for about 5-7 minutes until the onion caramelizes or is golden brown.
    5. In the meantime… toast the bread.
    6. Slice the avocado in half and slice into long pieces.

    7. Chop the cilantro.
    8. This is what the sauté mixture should look like.  Adjust the salt as need be.  Turn off the stove.avocado   caramelized red pepper & onion sandwich 146

    10. Layer as follows.  Take a toasted slice of bread. 
    11. Top with sautéed onion-red-pepper.
    12. Top with avocado slices.  Season the top of the avocado with a touch of salt and a squirt of lime juice.

      looks easy and quick enough to make for lunch! and I've refrigerated my avocados since they are too ripe - time to make a sandwich. I've had avocados in Pret sandwiches or I add to my veggie burgers at home.
      And congratulations on your nephew - babies bring such joy to families!!!!

        Thanks Archana.. it's super quick and easy. I need to eat at Pret more often, although I work in Manhattan, there are barely any Prets near me. I love adding avocados to veggie burgers, so good!!! Yes, babies bring a lot of joy to the families, especially to all the aunts and uncles without any responsibility! 🙂

      I love eating avocado sandwiches...with a bunch of other stuff! 🙂 It adds a buttery taste that can't be beat. My favorite combo is probably avocado, tomoato, and tofu. Sounds weird but tastes so good!

      Congrats on the birth of your nephew...how exciting! Avocado is one of my favorite sandwich and salad additions- it adds such a creamy texture! One of my favorite sandwich combos is turkey, hummus & avocado....toast with mashed avocado & runny eggs. Both taste heavenly!

      You probably already know this but the fastest way to ripen an avocado is to put it in a paper bag for 2-3 days. It's perfect every time!

      The sandwich looks amazing. I said it on Instagram and I'll say it again - I'm starving! 🙂

        Thanks Ameena. Yeah.. I've heard of it, but I didn't do it this time. My avocado was sitting next to super ripe bananas so I figured that may speed up the process, but didn't happen.

      I always add avocado to my sandwiches (if I have them at home). They are the perfect finisher and go good with everything! Also, that way you do not have to put mayo. Your sandwich looks amazing. I always get lazy to toast the bread but it adds a great texture.

      What a gorgeous sandwich Nisha! Love the flavors from the sweet peppers and cilantro and if that's not enough the creamy avocado to go with it. So many different textures in the sandwich. Just makes me want to grab it!
