I’ve embraced fall, but clearly I’m still hanging on to summer.
This avocado right here, it took about a week and a half to ripen, that’s right, a WEEK AND A HALF.
That’s one thing I’m gonna miss most about summers… avocados that ripen within a couple of days.
Anyhow, once my avocado finally ripened, I sautéed some red bell peppers and onions until they were caramelized, you know, when everything gets all nice and golden brown and sweet. Oooohhhhh.
And to that I added some cilantro. And some buttery, creamy avocado.
This concoction right here is one not to be missed.
Go buy your avocado today and make this ASAP! Healthy never tasted so good.
NUTRITION: Avocados are rich in Antioxidants and are a good source of Fiber, Folic Acid, and Vitamins B6, C, E and K. In addition, they help lower cholesterol and contain anti-cancerous properties. Bell Peppers are a great source of Vitamins A, B6, and C. Whole Wheat Bread adds Fiber and Protein to this sandwich.
INGREDIENTS (makes 2 sandwiches):
- Garlic Infused Extra Virgin Olive Oil – 1 tbsp
- Crushed Red Pepper Flakes – 1 tsp (use less if you can’t handle heat)
- Onion – 1 medium (sliced)
- Red Pepper – 1 medium (sliced)
- Salt – 1/3 to 1/2 tsp
- Black Pepper – 1/4 tsp
- Fresh Cilantro Leaves – small handful or 2 tbsp (chopped)
- 100% Whole Wheat Bread – 2 slices per sandwich
- Avocado – 1 (sliced)
- Fresh Lime – just a squirt for the avocado.
DIRECTIONS:
1. Start by slicing the onion and red pepper.
2. Heat a pan on medium heat, once hot, add oil and crushed pepper flakes.
3. After 5 seconds or so, add the onion and red pepper. Toss.
4. Season with salt and black pepper. Toss. Sauté for about 5-7 minutes until the onion caramelizes or is golden brown.
5. In the meantime… toast the bread.
6. Slice the avocado in half and slice into long pieces.
7. Chop the cilantro.
8. This is what the sauté mixture should look like. Adjust the salt as need be. Turn off the stove.
9. Add the cilantro and toss.
10. Layer as follows. Take a toasted slice of bread.
11. Top with sautéed onion-red-pepper.
12. Top with avocado slices. Season the top of the avocado with a touch of salt and a squirt of lime juice.
13. Cover with the other slice of bread. Slice in half and serve immediately.
TELL ME: Do you add avocados to your sandwiches? What’s your favorite avocado sandwich combo?
looks easy and quick enough to make for lunch! and I've refrigerated my avocados since they are too ripe – time to make a sandwich. I've had avocados in Pret sandwiches or I add to my veggie burgers at home.
And congratulations on your nephew – babies bring such joy to families!!!!
Thanks Archana.. it's super quick and easy. I need to eat at Pret more often, although I work in Manhattan, there are barely any Prets near me. I love adding avocados to veggie burgers, so good!!! Yes, babies bring a lot of joy to the families, especially to all the aunts and uncles without any responsibility! 🙂
Looks delicious! I love adding avocados to my eggs. I'll have to try it in sandwiches. Love the combo of caramelized onion and red pepper. Delectable!
Thanks Anne. I love avocado and eggs too. This combo is amazing, hope you try it.
What a great flavour combination, this looks so delicious 😀
Cheers

Thanks CCU.
I love eating avocado sandwiches…with a bunch of other stuff! 🙂 It adds a buttery taste that can't be beat. My favorite combo is probably avocado, tomoato, and tofu. Sounds weird but tastes so good!
Me too P.. it's so healthy and tasty. It's a great replacement for butter. I love avocado and tomatoes, tofu sounds fabulous too. No, I believe you, it would taste amazing. 🙂
Congrats on the birth of your nephew…how exciting! Avocado is one of my favorite sandwich and salad additions- it adds such a creamy texture! One of my favorite sandwich combos is turkey, hummus & avocado….toast with mashed avocado & runny eggs. Both taste heavenly!
Thanks K, it is exciting. I've never tried the avocado + hummus combo, but I love avocado with eggs… just so good!!!
This sandwich looks so good! I wasn't hungry until I started reading this post 🙂

Congrats to your fam on the new addition! So exciting 🙂 This sandwich looks amazing! I love the summery avocado but I feel like the caramelized onions can certainly bring it into fall 🙂

Thanks Georgia… it's really good, but 1 filled me up. Even healthier. 🙂
Gosh, such great flavors in this sandwich. Love this – really good job. Thanks so much.
Thanks.. so appreciate that.
Congratulations on your nephew! That's so exciting! And this sandwich … it looks amazing. This is definitely my kind of sandwich – especially with all that avocado!
Thanks Ashley… yeah, I love avocados too… adds so much richness and flavor, and it's so healthy.
Congrats on your new nephew! So exciting for you all.
You probably already know this but the fastest way to ripen an avocado is to put it in a paper bag for 2-3 days. It's perfect every time!
The sandwich looks amazing. I said it on Instagram and I'll say it again – I'm starving! 🙂
Thanks Ameena. Yeah.. I've heard of it, but I didn't do it this time. My avocado was sitting next to super ripe bananas so I figured that may speed up the process, but didn't happen.
Thanks… I hope you make this… it's healthy and only takes 15 minutes. 🙂
I'm sure you are aware of my obsession for avocados! This looks divine!! I love a simple avocado sriracha sammie for a mid-day snack. So so good!
Yes, I am aware, but I do have to try it with Siracha sauce. Sounds so good.
Congratulations to you on your new nephew!! Avocado is one thing I go crazy on when in Australia. I add it to everything. You definitely have the best sandwich recipes!
Thanks Amelia. It's a great sandwich topper… they don't have avocados in India?
I saw these caramelized veggie pictures on IG and it made me want a sandwich really really badly! Oh, and congratulations on the birth of your nephew. Little boys are awesome 🙂
Yea… glad I drew you in. The sandwich is actually better than the pic. Thanks.. we don't have too many little boys in the family, should be fun. 🙂
I always add avocado to my sandwiches (if I have them at home). They are the perfect finisher and go good with everything! Also, that way you do not have to put mayo. Your sandwich looks amazing. I always get lazy to toast the bread but it adds a great texture.
Yeah… me too. They had so much creaminess. I never use mayo, nor do I own it. Definitely a great replacement for mayo.
This sandwich looks insane, Oh boy, I wish I could dig my teeth into this beautiful healthy sandwich right now 🙂 Congrats on your new addition to the family. I am sure your cousin and everyone is super excited!!
Thanks Miryam… it is so good. You'd love it. Yeah, everyone is pretty excited. Thank you.
What a gorgeous sandwich Nisha! Love the flavors from the sweet peppers and cilantro and if that's not enough the creamy avocado to go with it. So many different textures in the sandwich. Just makes me want to grab it!
Thanks Asmita. Yes, the avocado really seals the deal.
Congratulations on your new nephew! I love the combination of flavors on my sandwich, and avocado makes everything better. I am pinning this recipe for later.
Thanks Natasha. That's so sweet of you, hope you make it soon. 🙂
Oh my! That looks smashing! Got to grab some avocados and make that for my daughter's lunch pack 😀
Thank you… it's really good… make them before it gets really cold. 🙂
I always want my husband to eat more avocados so I think this is a great way to go. He can't say no to the onions! 🙂
Yeah, they are so good for you. Caramelized onions – I think no one can say no. 🙂
