As I sit back and reflect on this past year, I realize timing is everything and things happen when you least expect them to. If someone told me a few years ago how different my life would be right now, I wouldn’t have believed them.

Alright, I won’t bore you with more deep stuff. To celebrate my birthday on National Strawberry Shortcake Day, a Strawberry Shortcake in a Mug seemed most fitting. This mug cake turned out so moist and delicious, plus it’s gluten-free and refined sugar free. Yup! So good. 🙂Strawberry Shortcake in a Mug - gluten-free, refined sugar free

Strawberry Shortcake in a Mug (gluten-free, refined sugar free)

A quick and delicious treat that you can whip up in under 10 minutes. It tastes as good as the real thing.

Ingredients

  • Organic Coconut Flour - 2 tbsp
  • Baking Soda - 1/4 tsp
  • Salt - just a pinch
  • Unsalted Melted Butter - 1 tbsp
  • Organic Fat-Free Milk - 2 tbsp
  • Organic Maple Syrup - 2 tbsp
  • Pure Vanilla Extract - 1/2 tsp
  • Organic Egg - 1 medium
  • Organic Fresh Strawberry - 1 big chopped
  • Rainbow Sprinkles - for garnish optional

Instructions

  • In a mug, combine the dry ingredients... coconut flour, baking soda and salt. Mix and set aside.
  • In a small bowl combine the wet ingredients... butter, milk, maple syrup, vanilla and egg.
  • Beat until combined.
  • Pour the wet ingredients over the dry.
  • Stir using a fork until the batter is smooth and very slightly lumpy. Make sure you get all the flour incorporated into the wet ingredients.
  • Top with chopped strawberries.
  • Stir gently.
  • Into the microwave for 90 seconds.
  • Garnish with strawberry and sprinkles, or you can top it with whipped cream, or Greek yogurt.

Notes

* for a dairy-free option - use vegan butter in equal parts and use coconut milk instead of fat-free milk.
** for a completely refined sugar free option - omit the rainbow sprinkles, I just added them for garnish for the birthday cake!

      Hi Sri. I haven’t tried this cake eggless, nor I have I made this in the oven. For the eggless part, you can try 1 tbsp of flax seeds and 3 tbsp of water, however the taste will definitely be altered. For the oven, you can try baking the cake in an oven safe dish at 350 degrees F for about 7-10 minutes and test the results. Let me know. Good luck.

      Yeah any kind of sugar isn’t good for you, but if you are going to choose sugar, aim for refined free, hence maple syrup.

          If you stick to maple syrup, coconut sugar, and honey.. that’s ideal. You can also use dates and prunes blended.

Vacationing with a kid has been a completely diffe Vacationing with a kid has been a completely different experience. While it’s nice to spend time as a family, dinners can get tough with a baby. Sanjiv and I enjoyed a romantic evening at House Without A Key in peace because Krish “thankfully” fell asleep (he was behind us I promise… swipe). It was so nice to converse with my better half over live music + cocktails, delicious food, and the BEST coconut cake (last pic). A memorable meal and evening! ❤️ #mylove

Aloha 🤙! Our first family trip! We made it to H Aloha 🤙! Our first family trip! We made it to Hawaii safe and sound, and Krish was pretty good on the plane. It’s my first time in Hawaii and I’m loving Waikiki… the beach, food, window shopping, and city life. I love being able to walk everywhere. It’s the perfect amount of action and relaxation for me. This is totally my kinda vacation 😎!  Krish has been loving all the people-watching… something he doesn’t do much of back home. He’s been flexible and has pretty much adjusted to our schedule. Thank you 🙏🏼 guys for all the food recommendations (Duke’s Hula Pie) and tips on traveling with a toddler. I can’t thank you all enough. ❤️ #myworld
