Alright, I won’t bore you with the more deep stuff. To celebrate my birthday on National Strawberry Shortcake Day, a Strawberry Shortcake in a Mug seemed most fitting. This mug cake turned out so moist and delicious, plus it’s gluten-free and refined sugar-free. Yup! So good. 🙂Strawberry Shortcake in a Mug - gluten-free, refined sugar free

Strawberry Shortcake in a Mug

Strawberry Shortcake in a Mug is a quick and delicious treat that you can whip up in under 10 minutes that tastes as good as the real thing.
Prep Time: 8 minutes
Cook Time: 2 minutes
Total Time: 10 minutes
Servings: 2 servings in a mug

Ingredients 

  • 2 tbsp coconut flour
  • 1/4 tsp baking soda
  • pinch of salt
  • 1 tbsp unsalted butter, melted
  • 2 tbsp milk
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 large strawberry, chopped
  • rainbow sprinkles for garnish, optional

Instructions 

  • In a mug, combine the dry ingredients... coconut flour, baking soda and salt. Mix and set aside.
  • In a small bowl combine the wet ingredients... butter, milk, maple syrup, vanilla and egg.
  • Beat until combined.
  • Pour the wet ingredients over the dry.
  • Stir using a fork until the batter is smooth and very slightly lumpy. Make sure you get all the flour incorporated into the wet ingredients.
  • Top with chopped strawberries.
  • Stir gently.
  • Into the microwave for 90 seconds.
  • Garnish with strawberry and sprinkles, or you can top it with whipped cream, or Greek yogurt.

Notes

* for a dairy-free option - use vegan butter in equal parts and use coconut milk instead of fat-free milk.
** for a completely refined sugar free option - omit the rainbow sprinkles, I just added them for garnish for the birthday cake!

    1. Yeah any kind of sugar isn’t good for you, but if you are going to choose sugar, aim for refined free, hence maple syrup.

      1. I am going with treacle these days. Hard to unrefined here. And the list is scary when you have a sweet tooth 🙁

        1. If you stick to maple syrup, coconut sugar, and honey.. that’s ideal. You can also use dates and prunes blended.

    1. Hi Sri. I haven’t tried this cake eggless, nor I have I made this in the oven. For the eggless part, you can try 1 tbsp of flax seeds and 3 tbsp of water, however the taste will definitely be altered. For the oven, you can try baking the cake in an oven safe dish at 350 degrees F for about 7-10 minutes and test the results. Let me know. Good luck.
