I hate my job, correction, I despise my job!  It is getting to that point, I feel I am so close to quitting.  It just never ends.  But what am I doing about it?  If I want to see change in my life, I have to do something about it, right?  So I guess the first thing is I have to fix up my resume after 3 years.  Tell you the truth, I’m not even sure if I wanna work as a techie person anymore.  I don’t feel rewarded or happy at the end of the day, but it does pay the bills.  My true passion is food. ๐Ÿ™‚  It makes me so happy, writing about it, talking about it, cooking it, and eating it.  But how do I land a job as a foodie?  

Since today was a really long day and it’s still not over, my husband picked us a Subway Veggie Patty Footlong on his way home from work.  He even got me a brownie.  Isn’t that sweet?  I thought so.  I love a little sugar when I’m feeling stressed out, it gives me a little pick me up.  I enjoyed the brownie with my tea at night… it was yummy!

Now my brother is a HUGE fan of oatmeal, making oatmeal for his family is pretty much his weekend gig.  Anyone who stays over his home knows they will be served oatmeal for breakfast.  I’m starting to think it is becoming a tradition now.  I love his oatmeal, but it is rather plain.  OMG… I said something bad about my brother, it was inevitable!  WHATEVA!!!  I think I can teach him a thing or two about making fruity oatmeal with antioxidants.  I wanted to make oatmeal today and I had blueberries on hand, so I figured I’d try making Blueberry Oatmeal for brunch.  I thought of the ingredients that would go in a Blueberry Cake and that’s how I came up with cinnamon and vanilla extract.  In addition, I added the blueberries to the heated oatmeal which softened the blueberries and sweetened them up a bit… this was delicious, not to mention so good for you!  Enjoy!

NUTRITION: Oats help reduce cholesterol and are a good source of Protein and Fiber.  Blueberries are a very good source of Vitamin C and Fiber.  They are a good source of Vitamin E. In addition, blueberries are an ANTIOXIDANT POWERHOUSE.  Milk is a very good source of Calcium and Vitamin D. It is also a good source of Protein, Vitamins A and K.

INGREDIENTS:

  • Quaker Oats – 1/2 cup
  • Milk 1% – 1/2 cup
  • Water – 1/2 cup
  • Cinnamon – 1/8 tsp
  • Pure Vanilla Extract – 1/4 tsp
  • Maple Syrup – 1 tbsp
  • Fresh Blueberries – 1/2 cup

DIRECTIONS:
1. Add oats to a small pot on medium heat.

2. Add milk.

3. Add water.

4. Stir and wait 3 to 5 minutes until the mixture thickens.

5. In the meantime, measure and set aside your blueberries.  

6. Check on the oatmeal, this is what you should have. Lower heat to dial #2 (low heat).

  
7. Add cinnamon.

8. Add pure vanilla.

9. Add maple syrup.

10. Add fresh blueberries.

11. Stir and allow this to cook for 3 to 5 minutes.  

  
12. Try to pop the blueberries… this will release all the blueberry goodness and the color.

13. Serve hot.  Ain’t it good?
