Growing up I never liked goat cheese, it’s definite,y an acquired taste. I was always put off by the tartness.

It was not until I discovered Trader Joe’s Chevre Goat Cheese with Fresh Herbs that I had a change of heart. Now I’m like how the hell did I stay away from goat cheese that long? 

I love adding goat cheese to salads with fruits, crackers, pasta, and pizza too! It actually tastes quite amazing on a pizza.

This Zucchini Goat Cheese Pizza is delicious with its crispy crust and cheesy filling that’s sure to satisfy your cravings.

What is Zucchini Goat Cheese Pizza?

Zucchini is one of those vegetable people either love or hate. I know it’s not for everyone, and personally, I find it bland and watery myself. With that said, if you consider sauteing zucchini in some olive oil and season it, it’s actually quite delicious. 

Making a Zucchini Goat Cheese Pizza has been on my to-do list for so long. I wanted to pair this combo with caramelized onions and sauteed cherry tomatoes. 

While making this pizza, I thought the pizza may be a little dry, and that’s when I decided to add cherry tomatoes as well which also add some juicy sweetness. 

And that’s how Tomato Onion Zucchini Goat Cheese Pizza was born. 

The combination of these ingredients paired with parmesan cheese over lavash bread is truly sensational.

Zucchini Goat Cheese Pizza is healthy-ish since it’s made on whole wheat lavash bread, topped with veggies, and baked with minimal cheese. Hope you guys love it as much as we did. It’s insanely good.

Ingredients for Zucchini Goat Cheese Pizza:

Zucchini: Thinly slice zucchini, I just used my Slicer – works so well. Then saute in two batches. Do not overcrowd the zucchini while sauteing.

Onions: Slice onions then saute.

Cherry Tomatoes: Slice in half and saute. 

Garlic

Green Chilies: Indian or Thai green chilies work. If you can’t find them, then use 1/2 a serrano.

Lavash Bread: I love Trader Joe’s Whole Wheat lavash bread – works so well.

Chevre Goat Cheese with Fine Herbs: I love the one from Trader Joe’s

Parmesan Cheese: Use freshly grated, it makes such a big difference in taste.

Marinara Sauce: My favorite Marinara is Rao’s Marinara. You don’t need a lot, just simply add a couple of dollops without adding too much.

Fresh Basil Leaves

Salt

Black Pepper

How to make Zucchini Goat Cheese Pizza recipe step by step?

Saute Zucchini

1. Thinly slice zucchini. We will cook the zucchini in 2 batches.

2. Heat up a castiron skillet on medium heat, once hot, add 3/4 tbsp of oil. Add half the zucchini.

3. The zucchini will cook fast. This is what you’ll have 3 minutes later. Season with salt and black pepper.

4. Cook for another 3-5 minutes until your zucchini is golden brown.

5. Once done, place the zucchini on a dry paper towel so the moisture will be absorbed. This will prevent the pizza from getting soggy.

Saute Onions

1. Next slice your onions. In the same skillet, add 1/2 tbsp of oil and your sliced onions.

2. This is how your onions will be 4 minutes later – perfect caramelized.

3. Set aside.

Saute your Cherry Tomatoes

1. Slice your cherry tomatoes in half. Chop your garlic and Indian/Thai green chilies.

2. Heat up the same skillet on medium heat. add oil, followed by garlic and green chilies. Saute for a minute.

3. Add cherry tomatoes and season with salt. Stir and cook for 5-6 minutes until soft.

4. This is what you should have. The cherry tomatoes will be sweet and delicious.

Veggies Prepped / Grate Parmesan Cheese

1. Veggies are now prepped.

2. Grate your parmesan cheese. I like using fresh parmesan cheese.

Assemble Goat Cheese Lavash Pizza

1. Take whole wheat lavash bread. I like using Trader Joe’s brand.

2. Spread a couple of dollops of marinara sauce. Don’t overdo it, you just want a thin layer of marinara sauce. I love using Rao’s Marinara.

3. Now top with sauteed zucchini – you want to add 24 slices of zucchini here. Spread them individually all over.

4. Top with onions and tomatoes – don’t overcrowd.

5. Now add crumbles of chevre herbed goat cheese – I used roughly 1 ounce for 1 lavash bread. You can certainly add more. 

6. Now add parmesan cheese – you’ll need about 1/3 cup of parmesan cheese.

7. Top with 8-9 fresh basil leaves. If you prefer, you can add basil leaves after baking too.

8. Bake for 5 minutes or so at 400 degrees until the lavash bread is crispy and the cheese has melted. I used my toaster oven here. Lavash bread gets crispy fast so it may take you anywhere from 3-5 minutes for that perfect texture.

9. Slice into 6 pieces and enjoy hot!

Serving Suggestions

One slice of Trader Joe’s Whole Wheat Lavash Bread can be cut into 6 squares. I would say one serving is 3-4 squares. 

Each square in 98 calories with all the toppings.

Meal Prepping Goat Cheese Zucchini Pizza

Zucchini Goat Cheese Pizza is great for meal prepping.

Simply prep your sauteed ingredients – zucchini, onions, and cherry tomatoes in advance, and you can make lavash pizza for the next 3 days – depends on how much you make and how many people you’re feeding of course.

Tips on making Zucchini Goat Cheese Pizza:

  • Make sure to thinly slice your zucchini – this is crucial. You can’t have thick pieces of zucchini. I use this slicer which is amazing! 
  • Saute the veggies in order – starting with zucchini, then onions, then tomatoes. You will be using the same skillet. Order matters because the zucchini and onions are cleaner to cook.
  • Make sure you enjoy Zucchini Goat Cheese Lavash Pizza when hot. It tastes best hot, not warm.

Frequently Asked Questions:

1. Can I make Zucchini Goat Cheese Pizza vegan, gluten-free?

If you would like to make this pizza vegan, simply replace the goat cheese and parmesan cheese with the vegan version. 

For a gluten-free option, you can try and find gluten-free lavash bread. That’ll work.

2. Should I use a castiron skillet to saute the veggies?

I highly recommend using a castiron skillet to saute the veggies due to that char flavor which is delicious on pizza.

3. Can I use grape tomatoes instead of cherry tomatoes? 

Yes. You can absolutely use grape or cherry tomatoes, whichever one is easier to find.

4. Is Zucchini Goat Cheese Pizza healthy?

Well, it’s definitely not unhealthy. The lavash bread contains 10 grams of protein and the pizza isn’t loaded with a ton of cheese. There is olive oil used when sauteing veggies, but I say olive oil is good for you. 

This pizza is balanced, it’s not super healthy, but it’s not unhealthy either. It’s healthy-ish. 🙂

  • 1 1/2 tbsp oil, divided in 2
  • 2 zucchini, thinly sliced

for the onions

  • 1/2 tbsp olive oil

for the cherry tomatoes

  • 1 tbsp olive oil
  • 3 cloves garlic
  • 4 green chilies
  • 1 pound cherry tomatoes

to assemble 1 lavash pizza

  • 1 whole wheat Lavash bread, I like Trader Joe's
  • 1-2 spoonfuls marinara sauce
  • 24 slices cooked zucchini
  • small handful onions Onions
  • small handful cherry tomatoes
  • 1 ounce goat cheese, crumbled all over
  • 1/2 cup parmesan cheese
  • 8 fresh basil leaves

Instructions

    This was fantastic! I followed the recipe almost exactly; the only change I made was omitting the Parmesan and increasing the goat cheese amount because I prefer goat cheese. A healthier way to satisfy my pizza craving. Thanks for the recipe!
