Who out there works for Corporate America?  Isn’t it Corporate Slavery?  Okay, I’m exaggerating, but it is very stressful at times.  I can’t complain though, I am lucky to be employed in this economy.  When working a stressful job or being a Mom (the hardest job in the world), these are the type of “quick” meals you resort to cooking… for me it’s the former.

I was so excited to be working from home on a Friday, I figured it would be a slow day.  Just the opposite happened.  I logged in and started checking my emails, at about 10 am, I realized there was a major issue, there were emails flying back and forth.  At 10:30 am, my laptop power cord gave up on me, my computer shutdown.  It wouldn’t start, the battery was dead.  At 10:45 am, I called my manager and explained the situation to him, his response, “work with so and so and get this done, tell them what to do or come in and work with them.”  I needed access to confidential data, I needed my laptop!  I was panicking.  That’s just how I am when things get stressful, I panic, call my husband, and then calms me down.  As per my manager’s demands, I called up so and so, chose to use my home computer and personal email to resolve these issues. 
 
 
By 12:30 pm, I was starving, I normally have gym plans during my lunch hour, that didn’t happen.  I thought of going for a walk and grabbing a sandwich, that didn’t happen, either.  And then it hit me, I had some leftover brown rice from my Tofu Jalfrezi, I also happened to have some scallions (which I love) on hand.  I chose to make Quick and Easy Egg Fried Rice.  It literally took me 10 minutes to put together, I was able to enjoy my meal and get back to work. 
 

To conclude my story, my husband came home early to help solve my problem.  He whipped out a bunch of power cords from the closet and started testing out my laptop, and when you least expect it, voila… my laptop started.  Just fyi, a Hewlett Packard power cord revived a Dell laptop. Who knew? And more importantly, who cares, I was thrilled… my issues got resolved much faster… the team was happy, thus I was happy… all because my husband, my savior came to my rescue. I guess sometimes us women do need rescuing!!!  🙂

NUTRITION: Eggs are a good source of Protein and Vitamin D.  I chose to use Brown Rice for this dish… adds some Fiber to this dish.


INGREDIENTS:

  • Cooked Brown Rice – 1.5 cups (leftover)
  • Scallions – 1 bunch (chopped in 1 inch pieces)
  • Onion – 1 small (diced)
  • Egg – 1 (scrambled)
  • Canola Oil – 3/4 tbsp or 1 tbsp
  • Soy Sauce – 1 tbsp
  • Rice Vinegar – 1 tbsp
  • Asian Chili Sauce – 1/2 tbsp
  • salt to taste

DIRECTIONS:
1. Here is how much brown rice I had leftover… roughly 1.5 cups of cooked rice.

 
 
 

2. Here are my ingredients, use a small onion, medium will be too much.  You can add frozen vegetables too since this is quick and easy.

 
 
 

3. Here are the sauces you will need.

 
 
 

4. Heat a pan on medium-high heat (dial #7).  Add oil.  Add egg.

 
 
 

5. Cook for 20 seconds or so until slightly cooked.

 
 
 

6. Add the scallions and onions.  Season with very little salt.  Saute for 1 minute. 

 
 
 

7. Add the brown rice.  Combine and saute for about 2 minutes.

 
 
 

8. Add the soy sauce, rice vinegar and chili sauce. 

 
 
 

9. Combine.  Cook until rice is hot.  Turn off the stove.

 
 
 

10. And I was back to work after a yummy meal  🙂
