Quick and Easy Egg Fried Rice without ginger and garlic comes together in minutes. Use leftover brown rice and sauté with eggs and Asian sauces. An easy and delicious meal.

Quick and Easy Egg Fried Rice (No Ginger, No Garlic)
INGREDIENTS
- 1 1/2 cups cooked brown rice, refrigerated
- 1 bunch scallions, chopped into 1 inch pieces
- 1 small onion, chopped
- 2 eggs, scrambled
- 1 tbsp oil
- 1 tbsp soy sauce/tamari
- 1 tbsp rice vinegar
- 1/2 tbsp Asian chili oil
- pinch of salt
INSTRUCTIONS
- Heat a pan on medium-high heat. Once hot, add oil, followed by eggs. Cook for 20 seconds or so until slightly cooked. Add the scallions and onions. Season with very little salt. Saute for 1 minute. Add the refrigerated brown rice. Combine and saute for about 2 minutes. Add the soy sauce, rice vinegar and chili sauce. Combine. Cook until rice is hot. Turn off the stove.
Can I make this with white Rice ??
yes, of course.
Haven’t tried this with brown rice yet, but tastes amazing with white.
