- 1 1/2 cups cooked brown rice refrigerated
- 1 bunch scallions chopped into 1 inch pieces
- 1 small onion chopped
- 2 eggs scrambled
- 1 tbsp oil
- 1 tbsp soy sauce/tamari
- 1 tbsp rice vinegar
- 1/2 tbsp Asian chili oil
- pinch of salt
Heat a pan on medium-high heat. Once hot, add oil, followed by eggs. Cook for 20 seconds or so until slightly cooked. Add the scallions and onions. Season with very little salt. Saute for 1 minute. Add the refrigerated brown rice. Combine and saute for about 2 minutes. Add the soy sauce, rice vinegar and chili sauce. Combine. Cook until rice is hot. Turn off the stove.
