My inspiration for this recipe is none other than Ina Garten, my favorite chef.  Her recipe is a bit more involved which can be found here, however I used a similar idea and added some Crushed Red Pepper Flakes to enhance this recipe a bit more.  

This recipe is super easy, quick, and healthy.  You can eat it as a side or as a meal with some brown rice.  Enjoy!

TELL ME: How do you make roasted broccoli?

NUTRITION: Broccoli adds tons of nutrition value… Fiber, Folic Acid, and Vitamins A, C, and K.  Cheese is a good source of Calcium and Protein. 

INGREDIENTS:

  • Fresh Broccoli – 1 head (cut into florets)
  • Garlic – 5 cloves (thinly sliced)
  • Extra Virgin Olive Oil – 1 tbsp
  • Salt – 1/2 tsp
  • Black Pepper – 1/2 tsp
  • Crushed Red Pepper – 1/2 tsp (go with 1/4 tsp if you can’t handle heat)
  • Parmesan Cheese – 2 tbsp
  • Lemon – 1/2 a lemon (slightly squeezed)

DIRECTIONS:
1. Preheat oven to 425 degrees.

2. Place aluminum foil on a flat baking tray.



3. Cut the broccoli head…



4. Cut into florets.  I used the stems.  Transfer to a large bowl.



5. Slice garlic cloves.



6. Add the sliced garlic to the broccoli.



7. Add extra virgin olive oil.



8. Add salt.



9. Add black pepper.



10. Add crushed red pepper.



11. Toss.  

12. Transfer the broccoli to the baking sheet.  


13. Into the oven for 20-25 minutes.  Mine baked for 25 minutes exactly.



14. In the meantime, grate some Parmesan cheese into a serving bowl.



15. Slice a lemon in half.  



16. Once the broccoli is done, this is what you should have.  Honestly, it tasted amazing without cheese and lemon, so you can totally skip adding them.



17. Add broccoli and bits of garlic to the cheese.



18. Slightly squeeze half a lemon.  Toss.



19. It’s sooooooooooo good!  I loved the crispiness of the broccoli and the pieces of roasted garlic in every bite.  I ate the whole thing all by myself!
