Winter Coconut Cranberry Oatmeal

Ever since I made Coconut Butter last week, I’ve really been enjoying my oatmeal with this new addition.coconut butter 328


Many of you asked me of ways to incorporate Coconut Butter into recipes, and besides oatmeal, I’m thinking smoothies, over toast, sandwiches, baked goods, fruits, and even some vegetables.  What else is left?coconut butter 308

Now coming up with actual recipes that incorporate coconut butter is the challenge, however I’ll have to start by trying out my new creations at home and make sure they are indeed good enough to post.    coconut butter 316

This Winter Coconut Cranberry Oatmeal is now one of my new favorite oatmeal recipes which is so warm and comforting.  coconut butter 334

NUTRITION: Oats help reduce cholesterol and are a good source of protein and fiber.  Coconut is low in cholesterol and sodium, and it is a good source of fiber.  Although coconut contains high amounts of saturated fats, not all saturated fats pose as a health problem, especially those linked with coconut.  Enjoy this coconut butter in moderation.  Cranberries are an excellent source of Vitamin C, a very good source of Fiber, and a good source of Vitamins E and K.  Pecans contain natural antioxidants and are heart-healthy nuts known to lower cholesterol.


INGREDIENTS:
  • Old-Fashioned Oats – 1/3 cup
  • So Delicious’ Original Organic Coconut Milk – 3/4 cup
  • Vanilla Extract – 1/2 tsp
  • Cranberries – 2 tbsp
  • Shredded Coconut – 1 tbsp
  • Pecans – just a few top
  • Coconut Butter – just a little on top

DIRECTIONS:
1. Start by heating oats and coconut milk on low-medium heat.almond joy oatmeal 092
2. Add vanilla extract.  Stir.coconut butter 071
3. Add cranberries.  Stir.  coconut butter 072
4. Once the oatmeal starts to thicken and bubbles start to form.  Turn off the stove.coconut butter 075
5. Pour into a pretty little serving bowl. coconut butter 242
6. Top with shredded coconut.coconut butter 258
7. And pecans.coconut butter 261

9. Some cranberries for garnish.  So goooooooooooooooooooood!coconut butter 303

  1. I'm still yet to try coconut butter but I'd be pretty happy with eating it off a spoon ;)! I'm sure it would taste pretty awesome on a banana topped with some chocolate chips too.
