Homemade Creamy Coconut Butter

Every time I hangout at Whole Foods and Trader Joe’s, I’m inclined to purchase their version of the 100% Virgin Organic Coconut Oil, but I hold back each time not knowing what Coconut Oil tastes like.  coconut butter 127

Instead I decided to buy a bag of organic, unsweetened, shredded coconut flakes and whip it up into Coconut Butter.  Seriously, how bad could it be?coconut butter 134

I figured since I love shredded coconut so much, how bad could Coconut Butter possibly taste?  coconut butter 142

Verdict?  Not bad at all, it.is.amazing!coconut butter 150

Just make sure to microwave the Coconut Butter for about 20 seconds before using it since the butter tends to harden in colder climates.coconut butter 168

NUTRITION: Coconut is low in cholesterol and sodium, and it is a good source of fiber.  Although coconut contains high amounts of saturated fats, not all saturated fats pose as a health problem, especially those linked with coconut.  Enjoy this coconut butter in moderation.

INGREDIENTS (yields ~ 1 cup):

  • 100% Organic Unsweetened, Shredded Coconut – 8 ounces  (I used Let’s Do… Organic brand from Whole Foods)



DIRECTIONS (THE ENTIRE PROCESS WILL TAKE 10 MINUTES):
1. All you need is a food processor and shredded coconut.
2. Pour all 8 ounces of the shredded coconut in the food processor.
3. Blend for a minute or two.coconut butter 051
4. This is what you should have, scrape down the sides.
5. Here is the rest of the process… blend and scrape down the sides every couple of minutes.

6. This is what you ultimately want… creamy coconut butter.coconut butter 062
7. Pour into a storage jar.  coconut butter 066

    So impressed Nisha…I have purchased Coconut Oil before but I don't really use it much because Ali and Maya are not fans…

    Now why didn't I think to do this? SO easy yet genius at the same time! I love all things coconut and I have a feeling this wouldn't last very long at home…haha maybe that's why I've never thought to make it ;)! As available as coconut oil in Mumbai is, I've never actually cooked with it but I recently read that it tastes exceptionally yum with eggs…I'll let you know if/when I do give it a shot!

    On a separate note- have you tried Lindt Dark with coconut? Too.die.for!

    i have heard a lot about coconut oil but personally never tried it although I love coconut flavor. what a smart way to make butter out it. Are you planning on incorporating it in any recipe?

    I have a small jar of coconut oil that I need to use more. The only way I know how is when roasting veggies. Have any other suggestions?

    I'm excited to see what recipes you use your coconut butter for… I bought some TJ's coconut butter a few weeks ago but have used it exactly once (primarily because I don't really know what to use it for). Keep me posted!

    @Ameena – I haven't tried Coconut Oil, but I think Coconut Butter tastes pretty yummy. If you like the taste of coconut, then I think you'd love coconut butter. πŸ™‚

    @Dixya – Recently I made oatmeal with the coconut butter, but that's it. You can replace the coconut butter with any nut butter.. i'll think of more recipes and post. πŸ™‚

    I have a huge jug of coconut oil I found Costco sells, before I used to get it @ trader joes but now the huge size fits best since I use it quite a bit! Maybe when we get to meet we can bake w/ some πŸ™‚ you will love it!

    @eatgood4life – Sure, I'd love to try your baked goods with coconut oil, I'm just reluctant to buy it and try it because what if it sucks? It's easy to love butter, ya know. πŸ™‚ Costco RULES!!!

    Please remember that putting it in the microwave will kill all the good nutrients in it. This is the coconut oil/butter I use: http://nutiva.com/products/coconut-oil-organic-benefits-nutiva/. I mix it with raw honey for a sweet spread, especially good on saltine crackers or blueberry bagels.

    @heatherchristine – Microwaving anything will kill the nutrients, I agree. I guess another option would be is to place the jar in warm water. I love Trader Joe's Virgin Coconut Oil – organic. I'll try Nutiva's version out. Thanks for sharing!!! πŸ™‚
