Mushroom Noodles

- 1 tbsp oil
- 2 tbsp unsalted butter divided
- 10 cloves garlic
- 4 green chilies
- 10 ounces shiitake mushrooms
- 2 tbsp soy sauce divided
- 150 grams ramen noodles
- 1/4 tsp black pepper
- pinch of salt
- 1/2 cup green scallions
Prep
Begin by boiling water. Once the water boils, add the ramen noodles. I love Ocean’s Halo which is a clean brand. Follow the instructions on the back of the packet, they shouldn’t boil more than 4 minutes.
Once noodles boil, rinse with cold water.
In the meantime, slice shiitake mushrooms, chop garlic, and green chilies.
Chop scallions.
Cook Noodles
Heat a wok on medium heat, once hot add oil and 1 tbsp of butter.
Add the chopped garlic and green chilies. Sauté for 30 seconds.
Add the mushrooms and saute for 5 minutes until the mushrooms release liquid.
This is what you should have.
Now add 1 tbsp soy sauce. Stir.
Add the rinsed noodles.
Toss well until noodles are coated and warmed through - about 2-4 minutes. Add black pepper. Toss.
Add a tbsp of butter and toss for a minute.
Add chopped scallions. Immediately turn off the stove.
