Healthy Almond Date Ladoo (whole30, paleo, gluten-free, eggless)

Healthy Almond Date Ladoo are a healthy and delicious treat for Diwali, or any time of year. They are so good and also good for you. Gluten-Free and Paleo.

Ingredients

  • 1 tbsp ghee
  • 1/2 cup organic almonds
  • 1/2 cup organic cashews
  • 1/2 cup organic medjool dates ~ about 6 dates
  • 1/4 tsp ground cardamom
  • 2 tbsp maca powder
  • pinch of salt
  • 2 tbsp organic chia seeds

Instructions

Roast & Grind

  • Soak the dates in hot water for 10-15 minutes.
  • In the meantime, heat a pan on medium heat, once hot, add ghee and then followed by almonds and cashews.
  • Saute the nuts for about 4-7 minutes. Note, the cashews will cook faster than the almonds so be careful.
  • Once done, add the nuts to a food processor.
  • Pulse a few times until crumbly, but don't overmix this else you'll end up with nut butter. Remove the crumbled nuts and set aside.
  • Now pulse the soaked dates (without water).
  • Add the nut mixture back to the food processor. Also add - maca powder, cardamom, and a pinch of salt.
  • Transfer the nut mixture to a bowl.
  • Add chia seeds.

Form Ladoos

  • Using a mini-scoop, take 2 scoops of the nut mixture in the palm of your hand.
  • Press the mixture until it forms into a ball.
  • Like this. Now roll it to make sure it's perfectly round.
  • Perfect.
  • Refrigerate for 1/2 hour or more, then enjoy!
