Chocolate Avocado Pudding

Chocolate Avocado Pudding is a healthier pudding made with avocados... I'm telling you, no one will ever know.

Ingredients

  • 1 avocado
  • 2 1/2 tbsp cocoa powder
  • 2 tbsp honey or maple syrup for vegan
  • 1/2 tsp pure vanilla extract
  • pinch of salt
  • 2 tbsp bittersweet chocolate chips melted
  • pinch of cinnamon powder optional

Instructions

  • Using a double boiler, add the chocolate chips and let them melt. Or you can use a microwave.
  • Slice the avocado in half.
  • In a food processor, add the avocado, cocoa powder, honey, vanilla extract, and salt.
  • Blend.
  • Add the melted chocolate to the food processor. Blend.
  • I added a pinch of cinnamon, or stop at this point.
  • Serve right away - I didn't like the flavor after refrigerating. I prefer the flavor of the mousse when eaten right away. Smooth, thick, creamy!
