Lavash Bread Pizza
Lavash Bread Pizza is a thin-crust pizza topped with my favorite veggies and super quick and easy to make. Perfect weeknight meal!
One serving is 2 half lavash pizzas or 8 small slices.

Ingredients
for spinach mushroom saute

avocado oil

to assemble half lavash pizza

mushroom-spinach mixture

kalamata olives, sliced

parmesan cheese, grated

Instructions
Prep
Slice the mushrooms. You will also need some fresh baby spinach.
Heat up a castiron skillet. Once hot, add oil followed by mushrooms. Cook for a minute.
Season with salt and black pepper. Cook for 3 minutes.
Add 8 cups of spinach. Season with salt to taste. Cook for 3 minutes or until the spinach wilts.
This is what you should have.
Transfer the spinach mushroom mix to a paper towel to help soak the moisture. Doing this step will ensure your pizza won't be soggy.
Assemble
Split a whole wheat lavash bread (I love Trader Joe's) in half.
Spread 2 spoonfuls of your favorite marinara sauce (I used Rao's Arrabbiata Sauce). Don't add too much sauce else your pizza will be soggy.
Spread some of the spinach mushroom mixtures. Also, top with sliced olives.
Top with parmesan cheese (preferably the grated kind, not shredded). Grated melts way better.
Place the lavash bread into a toaster oven and bake at 400 degrees for 4-5 minutes. The lavash bread will get toasty.
In the meantime julienne some fresh basil.
Pizza is done.
Cut into 4 pieces. Top with fresh basil and red crushed pepper.
Notes
for gluten-free option
: use GF lavash bread.
