Quick & Easy Lavash Bread Pizza is a thin-crust pizza topped with mushrooms, spinach, and olives. Makes the perfect weeknight meal!One serving is ½ a lavash bread or 4 slices.
Heat up a cast iron skillet on medium heat, once hot, add oil.
Add sliced mushrooms. Saute for 3 minutes and season with a little salt.
This is what you should have.
Add 5 ounces of spinach. Season with salt to taste. Cook for 3 minutes or until the spinach wilts.
Once veggies are cooked, turn off the stove.
Transfer the spinach mushroom mix to a paper towel to help soak the moisture. Doing this step will ensure your pizza won't be soggy.
Step 2 - Assemble
Split whole wheat lavash bread (I love Trader Joe's) in half.
Spread 2 spoonfuls of your favorite marinara sauce (I used Rao's Arrabbiata Sauce). Don't add too much sauce else your pizza will be soggy.
Spread some of the spinach mushroom mixtures. Also, top with sliced olives.
Top with shredded parmesan cheese.
Place the lavash bread into a toaster oven and bake at 400 degrees for 5-6 minutes. The lavash bread will get toasty.
Once done, remove the pizza from the toaster oven.
Cut lavash pizza into fours. Top with julienne basil and crushed red pepper.

For Gluten-free option: use GF lavash bread.
For Vegan option: use vegan cheese.
For Sauteing Veggies: Once the mushrooms and spinach have been cooked down, be sure to place the veggies on a paper towel to soak up the moisture. This will prevent you from having soggy pizza.
For Baking Pizza: When baking the pizza in the toaster oven, make sure you check the pizza after 4 minutes for your desired crispiness. Bake for another minute or two depending on how crispy you want your pizza.
