My New Baby? What? When? How? Well, a baby doesn’t necessarily have to be a person; it could be a desired object as well. So yesterday was a big moment in my life because I finally bought a new car. Believe it or not, I have never owned a new car before being the youngest of 4, I always got the hand-me-downs. Earlier, I just needed a car to get from point A to point B, so I didn’t mind used cars. Since my accident though, I’ve been in need of a car and I figured it was about time I did this and it was the best feeling in the world.
I believe the 2 biggest accomplishments in life from a materialistic point of view are buying a car and buying a home. These are probably the 2 biggest purchases that will ever be made by any individual/couple. After my husband and I signed on the dotted line I felt a huge sense of accomplishment. I felt as though all those years of hard work and education actually paid off. I felt as though all those years of commuting and working in the corporate world actually paid off. I felt as though all those late nights spent in college and the office just to meet a deadline actually paid off. My journey to arrive at this point in my life certainly wasn’t easy, it required hard work and dedication, and I had to believe in myself. Of course, part of my accomplishment also goes to my parents who were able to provide a good life for me, an education, and put me on the right track. So thanks to my parents 🙂
Once we had the car, I had so many thoughts rushing in my mind. I felt so differently about my 9 to 5 job. I realize how lucky I am to have a job in this recession. I realize I can’t have this nonchalant attitude about work and I have to work more diligently. I feel a rush of adrenaline that is now forcing me to work harder and make more dreams a reality. It is these big moments in life… completing college, getting a job, getting married, buying a car, buying a home, having a child, providing that child with love and an education, seeing your child graduate, watching them get married, having grandkids… that keep us all going. We reduce our checklist by one more accomplishment and feel proud of ourselves. Life goes on and we move on to the next item on the list to accomplish. Isn’t that so? I now move to the next item on my checklist and continue on this journey with my awesome husband who continues to support me in everything I do.
Enough of my profound thoughts. 🙂 So here is what I made today for our baby on her birthday, May 15, Fudgy Walnut Brownies Reduced Fat! My recipe was adapted from Steph who is Obsessed with Baking… truly a great site. The bittersweet chocolate chips add antioxidants to this recipe. Brownies baked from scratch taste a lot better than the boxed stuff, it makes a huge difference and tastes more fresh. Give this a try and you will start to think OUTSIDE THE BOX!
NUTRITION: Walnuts are an excellent source of Omega-3 Fatty Acids. They are rich in Vitamins B and E, and contain Antioxidants. They are a good source of Protein. Dark Chocolate is an excellent source of Antioxidants… isn’t that great? 🙂
MODIFICATIONS I MADE:
- I used 1/2 cup of Whole Wheat Pastry Flour and 1/4 cup of All Purpose White Flour, by doing so I added the fiber in this recipe without altering the taste.
- I used low fat yogurt instead of sour cream.
- I added 1/2 a cup of walnuts which adds omega 3 fatty acids to the brownies.
- I omitted the chocolate syrup and added 2 tbsp of milk instead.
- I added 1 tsp of espresso instead of 1/2 tsp of coffee granules.

Calories: 155 cals
Fat: 8.3 g
Saturated Fat: 1.8 g
Carbs: 20 g
Protein: 2.7 g

WALNUT FUDGY BROWNIES (REDUCED FAT) (adapted from Obsessed with Baking)
~ yields 16 squares @ 350 degrees
~ fat and calories stayed the same from the original reduced fat recipe; fiber increased by 1g
- Whole Wheat Pastry Flour – 1/2 cup
- All Purpose White Flour – 1/4 cup
- Baking Powder – 1/2 tsp
- Salt – 1/4 tsp
- Ghirardelli Unsweetened Cocoa – 1/3 cup
- Butter – 2 tbsp
- Ghirardelli Bittersweet Chocolate Chips – 1/4 cup
- Sugar – 1 cup
- Pure Vanilla Extract – 2 tsp
- 2% Milk – 2 tbsp
- Medaglia D’Oro Espresso – 1 tsp
- Egg – 1
- Egg White – 1
3. In a bowl, sift the flour, baking powder, and salt. Set aside.
4. On a double boiler, add the butter and bittersweet chocolate chips and whisk low heat. Allow this to melt until smooth.
OVERALL RATING: ****/5
My husband rated these brownies as 4.5, however he would have preferred more rich brownies. I personally thought the brownies were very good considering they merely have 2 tbsp of butter, I rated these a 4. The bittersweet chocolate chips definitely add some fat to these brownies, but at least they contain antioxidants. Obviously, if you want the buttery rich brownies, the fat and calories will be affected. Personally, I thought these brownies taste the best the same day, the next day I felt the chocolate flavor was not as intense. Overall, very good brownies considering the fat and calories, you won’t feel like you are missing out on the real thing.
Texture: The texture was good however the brownies look more cake-like, rather than fudge-like. You can try baking the brownies 5 minutes longer and they would be more fudge-like.
Moistness: The brownies were soft and moist.
