During this time of year, it seems nearly impossible coming up with healthier recipes, especially with salted caramel, pecan pies, caramel cheesecakes, and pumpkin everything staring you in the face.  Spiced Rum Banana Nut Bread w.Cream Cheese Glaze (22)

For this fall-inspired Banana Bread, I added spiced rum, cinnamon, walnuts, whole wheat flour, and Greek yogurt.  Spiced Rum Banana Nut Bread w.Cream Cheese Glaze (2)

NUTRITION: Whole Wheat Pastry Flour is an excellent source of Protein and Fiber.
Greek Yogurt is an excellent source of Protein and Calcium.
Bananas are a very good source of Vitamin B6.  They are also a good source of Vitamin C and Fiber.
Walnuts are packed with heart-healthy Omega 3 Fatty Acids and Antioxidants, and are a good source of Protein.




APPROXIMATE NUTRITION PER SLICE w/GLAZE (12 slices):

  • Calories: 240 cals
  • Fat: 9.2 g
  • Saturated Fat: 1.7 g
  • Carbs: 32 g
  • Protein: 5.5 g
  • Fiber: 3.1 g



INGREDIENTS:
for the Spiced Rum Banana Nut Bread:

  • Organic Whole Wheat Pastry Flour – 1 2/3 cups
  • Baking Soda – 1 tsp
  • Ground Cinnamon – 1/2 tsp
  • Salt – 1/4 tsp
  • Dark Brown Sugar – 1/2 cup  (packed)
  • Organic Eggs – 2
  • Organic Ripe Bananas – 3 1/2 medium size  (mashed)
  • Fage 2% Greek Yogurt – 1/2 cup
  • Organic Canola Oil – 2 tbsp
  • Pure Vanilla Extract – 1 tsp
  • Captain Morgan Spiced Rum – 2 ounces
  • Walnuts – 2/3 cup  (chopped & toasted)

for the Coconut Rum Light Cream Cheese Glaze:

  • Neufchatel Light Cream Cheese – 2 ounces
  • Malibu Original Caribbean Rum w/ Coconut Flavor – 1 tsp
  • Pure Vanilla – 1 tsp
  • Confectioners’ Sugar – 4 tbsp
  • Milk 2% Reduced Fat – 3 tbsp  (less or more for desired consistency)



DIRECTIONS:
for the bread:
1. Preheat oven to 350 degrees.preheat
2. Grease a 10” x 5” loaf pan with butter.  Line with parchment paper.
3. Combine all the dry ingredients in a medium size bowl… flour, baking soda, cinnamon, and salt.  Set aside.
4. Combine the wet ingredients in a large bowl… brown sugar, eggs, Greek yogurt, Canola oil, and vanilla extract.  Mix with an electric mixer until all the ingredients are combined.  Spiced Rum Banana Nut Bread w.Cream Cheese Glaze (50)
5. Add the mashed bananas and spiced rum.  Mix some more.
6. Chop and toast the walnuts on medium heat until you can smell the aroma.
7. Once cooled, add the walnuts and dry ingredients to the batter.  Now FOLD, do not mix, FOLD the ingredients into the batter until combined.
8. Pour the bread batter into the loaf pan.
9. Into the oven for 45 minutes.  Mine baked for exactly 45 minutes, you may need less or more time.
10. Perfect!
11. Using a toothpick, poke holes into the banana bread.  This will allow the glaze to seep through.  Let it cool for about 15-20 minutes.
for the glaze:
11. Add the light cream cheese, rum, vanilla, and powdered sugar into a mixing bowl.  Whip until light and fluffy.Spiced Rum Banana Nut Bread w.Cream Cheese Glaze (61)
12. Add milk.  Mix some more. 
13. Glaze is ready.
14. Drizzle over slightly cooled bread.  Slice and serve immediately.  Tastes best warm.Spiced Rum Banana Nut Bread w.Cream Cheese Glaze (9)

Flavor: Delicious, perfect sweetness.
Moistness: Just right. Tastes best warm. Microwave for 15 seconds if desired.
Texture: Bread-like, not dry or oily.
Glaze: Sweet Rum glaze. Complements the bread perfectly.

    Love the glaze on top! And I'm with you, while I love indulging in baked goods outside of the house, when I make stuff at home, it has a healthy twist. This is mostly because V and I have 0 willpower! This cake would be gone in less than 48 hours in our house!

      Thanks Parita. Unless I'm baking for friends, I tend to bake healthy. Lately my stuff has been unhealthy since it is holiday season, people sort of just expect unhealthy. This bread is delicious, doesn't taste reduced fat.

On the other hand, it's also been an amazing year for me because I was given the greatest gift of all... my baby boy! ❤️⁠ ⁠ I never shared that as of week 26 my baby was breached. I was scheduled for a C-Section on December 29, however Baby Krish decided he wanted to come 2 weeks sooner. Just in time for a New Years Day Brunch that won't Just in time for a New Years Day Brunch that won't have you slaving in from of the stove. 💫 BAKED STRAWBERRY FRENCH TOAST 💫 using @stpierrebakeryus NON-GMO brioche bread that's so buttery soft delicious. Simply cube brioche bread slices, whisk the egg batter, add the bread to the batter, and bake it in the oven. Finish with a dusting of powdered sugar and top with maple syrup. So good. Recipe below! #HolidaysWithStPierre #BriocheBrunch #StPierreBrioche #StPierre #Ad . BAKED STRAWBERRY FRENCH TOAST 🔺INGREDIENTS 4 eggs 1 1/2 cups whole milk 2 tbsp sugar 2 tbsp light brown sugar 2 tsp vanilla 1/4 tsp salt 1 cup strawberries, sliced 8 slices @stpierrebakeryus brioche bread, 1-inch cubes 1 tbsp sugar, for topping Powdered sugar, for garnish Maple syrup, for garnish . 🔺DIRECTIONS 1. In a large mixing bowl, whisk the egg mixture together - eggs, milk, sugar, light brown sugar, vanilla, and salt. 2. Cube 8 slices of brioche bread - this should yield roughly 5 cups. 3. Transfer the brioche bread into the egg mixture. Make sure the bread is well-coated. 4. Spray a 7” x 11” x 2” deep baking dish with coconut oil. 5. Add half the brioche bread egg mixture into the baking dish. 6. Top with all the sliced strawberries. 7. Top with the remaining brioche bread egg mixture. 8. Cover with a plastic wrap and refrigerate for 30 minutes to 2 hours. 9. Top baking dish with 1 tbsp of sugar. 10. Place in the oven for 60 minutes or until the top is golden brown. 11. Serve hot. Top with powdered sugar and maple syrup. #brunch
