1 Minute Chocolate Brownie in a Mug... a quick dessert for when you need something sweet.
Carrie Bradshaw said, "Enjoy yourself. That’s what your 20s are for. Your 30s are to learn the lessons." Boy was she right. I don't know when life got so complicated.
Now that I am a little older, a little wiser, it seems to me the best time of your life are in your 20s. If I told my 20 year old self that, I would never have believed me.
Life just seemed easy back then, more carefree, with less responsibility, less pressure.
As you are probably already aware, I've been in a funk lately, but I'm trying really, really hard to pull myself out of it. Really.
While I still love cooking and baking and do it pretty effortlessly, I find blogging so incredibly difficult because I'm stumped every time I sit down to pen my thoughts.
At this time, I don't feel like I can share everything and it's hard to pretend and write a "happy post" when my less than optimistic thoughts consume me.
My friend, Anu, has been encouraging me to blog more often, and she told me to just write about how I'm feeling at the moment and the sharing part will eventually follow when the time is right.
So yeah, at this very moment I feel lost, confused, and defeated.
I question the meaning of life and what my purpose is.
I question the path that I am on.
I question if everything happens exactly the way it is suppose to happen.
I question what if I had done things differently, would I still be on the same path?
I question if things will turn out okay.
I have thoughts like this just about everyday.
And I suppose with thoughts like that, I deserve a little cake, clearly I'm an emotional eater when it comes to desserts, but not with food. 🙂
After attempting 3 different recipes, I settled on this one because it tastes pretty darn good for a microwave recipe. This Chocolate Brownie in a Mug takes about a minute in the microwave, it’s perfectly delicious and indulgent, and ideal for sharing with someone on Valentine's Day. Enjoy!
NUTRITION: Cocoa Powder is an excellent source of antioxidants, protein, and fiber. Besides that, there is no nutrition in this recipe. This recipe is high in saturated fat and ideally should be shared between 2 people.
APPROXIMATE NUTRITION PER SERVING (yields 2 servings):
- Calories: 225 cals
- Fat: 12.5 g
- Saturated Fat: 8 g
- Carbs: 14 g
- Protein: 2.5 g
- Fiber: 1 g
CHOCOLATE BROWNIE IN A MUG (slightly modified from Food.com)
INGREDIENTS:
- Unsalted Butter – 2 tablespoon (melted)
- Water – 2 tbsp
- Vanilla Extract – ¼ tsp
- Salt – just a pinch
- Turbinado Brown Sugar in the Raw – 2 ⅔ tbsp
- Unsweetened Cocoa Powder – 2 tbsp
- All-Purpose Flour – 4 tbsp
DIRECTIONS:
1. Throw some butter in a microwave safe mug. Melt in the microwave for about 30 seconds. If not completed melted, microwave another 15 seconds.
2. To the melted butter, add water, vanilla extract, and salt. Whisk.
3. Add cocoa powder and sugar. Whisk.
4. Add flour. Whisk.
5. Microwave for 60 seconds depending on your microwave strength. Do not go beyond 75 seconds.
6. After microwaving for 60 seconds, the results were fudgy and gooey.

im glad you listened to Anu and have penned down your thoughts - this is definitely a hard time for you dear and like they say time heals, i really hope it does. sometimes a change in scenery and people around can help look a things different but again, its not always easy to do that either. lately, i have been struggling to find a balance between things in my life which gets me really frustrated and definitely blogging has suffered but i have been trying. im always here if you ever need to talk...and on that note, i could definitely use this brownie in mug, looks so decadent. take care.

Being in a funk is the worst. I hope you feel better asap! This post makes me smile. I eat terribly when I'm in a funk. Sometimes I make a mini personal cake with not-all-natural cake mix in a small ramekin. This brownie might be slightly healthier and worth a shot. Hi Nisha, I can totally relate... I've been asking some of those same questions to myself lately. It's hard to stay positive sometimes, so it helps to distract the mind and do something that brings a little joy in my life. Speaking of which...
