    Happy Diwali!!!!!!!!!!!!!!!

    Today is Diwali, the festival of lights which is also known as the Hindu New Year.  It is the celebration of health, wealth, and prosperity in the hope of having a happy new year. 

    Similar to Christmas, Diwali is a festival where people decorate their homes with flowers, lights, and diyas (candles).  Later in the evening, a puja (prayer) is performed for Lakshmi, the Goddess of Wealth and Prosperity.  Family and friends share sweets during the celebration of Diwali.

    DESSERTS

    • Gajar Ka Halwa (An Indian Carrot Pudding)
    • “Healthier” Gajar Ka Halwa (An Indian Carrot Pudding)

    MAIN COURSES (NORTH INDIAN)

    (instead of naan/roti, indulge in a puri today; instead of tofu, cook with paneer today; replace yogurt with sour cream or cream today; consider using paneer instead of potato/chickpeas in a spinach dish; chole is also very popular amongst North Indians on Diwali; basically eat anything “indulgent”.  The recipes below are pretty healthy, so consider substituting with the ingredients mentioned above.)
    • Dhaniya Aloo Gobi (Potatoes & Cauliflower in a Cilantro paste)
    • Aloo Matar (Potatoes & Green Peas)
    • Punjabi Bhindi Masala (Okra sauteed with Onions and Tomatoes)
    • Methi Gobi Aur Shimla Mirch (Fenugreek Cauliflower and Bell Peppers)
    • Aloo Tamatar Gravy (Potatoes cooked in a Tomato Gravy Sauce)
    • Chana Saag (Chickpeas and Spinach cooked in a Yogurt Gravy)
    • Kashmiri Dum Aloo (Baby Potatoes sauteed in a Spicy Yogurt Gravy)
    • Punjabi Kadhi (Punjabi Yellow Curry)
    • Traditional Aloo Gobi (Potato & Cauliflower sauteed with Onions)
    • Aloo Palak (Potatoes cooked in a creamy Spinach Gravy)
    « Mini Chocolate Truffle Cakes (Reduced Fat & 105 Calories)
    Microwave Paal Kova (milk cake) »
