Friday I worked from my mom’s home and headed to our favorite diner with my mom, brother, and nieces. I enjoyed my favorite, French Toast, it was so delicious.
Going to the diner with my mom and nieces is such a nostalgic feeling and brings back so many memories of my childhood. My nieces insisted that we order Curly Fries – they have such cute little hands.
Due to the high temperatures, Saturday my husband and I chilled at home and watched one of my all time favorite Indian DRAMA movies, Silsila, which my husband painfully sat through. We had a Mexican Fiesta with Buffalo Nachos and Lychee Martinis.
And Sunday my friend, MM, came over for one of our last meals before she leaves NYC to pursue her MBA from a top school.
We had brunch at Amanda’s in Hoboken and went for a nice walk along the Hudson River with gorgeous views of New York City.
MM has been my “yes” friend these past few years, just someone who is for anything anytime, well, except clubbing! I suppose we both grew from one another learning about new cultures through food and life experiences.
It was really sad for me when she left because it made me realize that I won’t be seeing her whenever. My “yes” friend was leaving! Part of me feels as though most of my friends who I have connected with have moved elsewhere. It’s happened quite a number of times that now I’m convinced it is a pattern. I can’t help but wonder at times, who is next? Luckily I had my hubby by my side to make me feel better and told me that I’ll be visiting my friend and she will be visiting NYC. He also said he’ll make me a cup of tea once we got home which put a smile on my face.
So MM… I wish you all the best in MBA school and I know you’ll do amazing. I know with your hard work, determination, and perseverance your dreams will be a reality in the near future where you will be living “the life” somewhere near a beach in sunny California

And now, Grilled Peaches.
I was in the mood for dessert this weekend, but a healthier dessert and so I decided to grill the peaches I had on hand.
If fat isn’t an issue for you, go ahead and use Vanilla Ice Cream instead of Greek Yogurt. Enjoy!
NUTRITION: Peaches are a very good source of Vitamin C. They are a good source of Fiber and Vitamin A. Yogurt is a good source of Protein and Calcium.
INGREDIENTS:
- Peaches – 2 (halved)
- Unsalted Butter – 1/2 tbsp
- Brown Sugar – 2 tbsp
- Cinnamon – pinch
- Fage Honey Greek Yogurt 2%
– couple dollops
- Honey – just a drizzle
DIRECTIONS:
1. Slice both peaches in half. Remove the pit.
2. Glaze each half with butter.
3. Heat a pan on medium heat and place the curvy side of the peach down. Grilled for a couple minutes.
4. Flip the peaches.
5. In another pan, preferably cast iron, heat a little butter on low-medium heat.
6. Add brown sugar.
7. Keep stirring.
8. Check on the peaches.
9. Once grilled add the peaches to the butter and brown sugar mixture. Toss to coat.
10. Sprinkle a little cinnamon.
11. In a serving bowl, add 2 peach halves.
12. Top with a couple dollops of Greek Yogurt on top.
13. Drizzle honey.
14. Indulge. So so so good! Again, if fat isn’t an issue, you can use Vanilla Ice Cream, but then it wouldn’t be a lite dessert.
