Friday’s Favorite Things – 5.18.12

1. Waterfront

This past weekend was GORGEOUS in the tri-state, and so my husband and I went on a 2 hour walk by the waterfront, it was so relaxing and peaceful.  The splendid view of New York City never gets old despite how dirty the Hudson River water is.  And check out the Freedom Tower which is still under construction, and now stands as the tallest building in Manhattan… it had to happen!  ~ priceless  IMG_0421

2. Chocolate Lovers Cupcake @ The Cupcake Salon
Recently a new bakery opened up across the Hudson River in downtown Jersey City – Cupcake Salon.  I picked up a Chocolate Lovers cupcake from here and let me just assure you this is the BEST chocolate cupcake with chocolate buttercream I have ever had.  Typically, I’m not a huge fan of chocolate on chocolate, however this cupcake takes the cake.  It is so moist and the buttercream is silky and creamy.  Unwillingly, I split the cupcake with my husband in an attempt not to put on weight, desserts are my weakness ya know.  ~ $3 @ The Cupcake SalonIMG_0448

3. Pasta Prima’s Spinach & Mozzarella Ravioli @ Costco

My friend, Jenna, stopped by after work one evening and I served her this amazing ravioli, but I took it up a couple notches.  First of all, you should know Pasta Prima’s Spinach & Mozzarella Ravioli is pretty damn good just on its own, and I’m impressed with the nutrition as well, 5 grams of fat in 1 serving (1 cup), and 2 grams of saturated fat.  In addition, it is 100% all natural.  To make this dish slightly healthier though, I served the ravioli on a bed of greens with some homemade dressing, and then finished it off with sautéed mushrooms, cherry tomatoes, and green peas all cooked in extra virgin olive oil.  Jenna loved it, my husband loved it, and I loved it.  I love Costco, especially all their gourmet food, and weekend tastings.  Their concept is brilliant.  ~ $10 @ Costco; try other major grocery stores; brand ~ Pasta Prima

DISLIKE OF THE WEEK
Frontier’s Coconut Flavor Extract @ Whole Foods
When I came home and tasted this coconut extract I couldn’t believe how “oily” it was, that’s because it is made with cottonseed oil.  YUCK!  Instead of an extract providing coconut flavor, it adds more unnecessary fat to my dish, and more importantly it doesn’t even taste like coconut.  Save yourself SEVEN BUCKS and just use real coconut.  Imagine, I could have bought 2 cupcakes for that price.

TELL ME: Share some of your favorites and DISLIKES of this past week!

INSANE pic of New York and it makes me want to come visit all the more! Like you I am not a fan of chocolate on chocolate either but that cupcake does look good…I don’t mind just a bowl of that frosting- YUM!

I'm doing a "Friday Favorites" post today too but I'll share one of my dislikes: Pantene shampoo! I know that's pretty random but for 2 days straight, I washed my hair with it and my hair was STILL greasy after it dried…so gross! Fortunately third wash did the trick thanks to L'oreal!

@Parita – I love Costco too, too bad I can't go as often – just once a month. You can't ever go there without dropping $200.
Yes, please let me know when you visit, I'd love to meet both of you. We can go cupcake hopping. 🙂

@Ameena – if you like chocolate on chocolate, I think you'd love this cupcake. Most of the times I love coconut, once in a while too much coconut oil makes it weird. But I love fresh coconut and shredded, of course. 🙂

I love the skyline shot of NYC! Also what would make an outing better than stopping by a bakery, but not just any bakery-one that specializes in cupcakes. Yum! Enjoy the weekend!

    Hi,
What a great shot of the waterfront. My sister in law lives at Port imperial and also has a gorgeous view of the city. Every summer when I visit, I love taking long walks there.

@Asmita – the waterfront area is amazing summertime – from Downtown Jersey City all the way to Weehawken/Edgewater. It's like being on vacation sometimes. I'll come with you when you visit. 🙂

I made a delicious marinade for the paneer and sauteed it along with the veggies. Assemble your whole wheat quesadillas and cook until the cheese has melted. The best part about this dish is my "special taco sauce" which complements these quesadillas perfectly.

Happy Mother’s Day to all you moms who show up s Happy Mother’s Day to all you moms who show up selflessly every single day. Also, a happy mothers day to all of you who want to be moms. ❤️ This is the most challenging role of my life, but the journey is totally worth it. Krish has made me a stronger and happier person. He gives new meaning to my life. And lastly, my kid couldn’t give me one nice picture of us in Hawaii… there’s either someone in the back or he’s making a face or he just wants to get away. He just can’t sit still for a minute… and with that a Happy Mother’s Day to me! 🥰

Sanjiv and I enjoyed a romantic evening at House Without A Key in peace because Krish “thankfully” fell asleep (he was behind us I promise… swipe). It was so nice to converse with my better half over live music + cocktails, delicious food, and the BEST coconut cake (last pic). A memorable meal and evening! ❤️ #mylove

It’s my first time in Hawaii and I’m loving Waikiki… the beach, food, window shopping, and city life. I love being able to walk everywhere. It’s the perfect amount of action and relaxation for me. This is totally my kinda vacation 😎! Krish has been loving all the people-watching… something he doesn’t do much of back home. He’s been flexible and has pretty much adjusted to our schedule. Thank you 🙏🏼 guys for all the food recommendations (Duke’s Hula Pie) and tips on traveling with a toddler. I can’t thank you all enough. ❤️ #myworld
