My best friend, Anu, is in town from London and met up with me at the mall lunch time. It was such a pleasant surprise. She is 6 months pregnant and wanted Taco Bell, but I suggested she opt for Chipotle instead, hello, it’s much healthier and fresher… she’s prego. Don’t get me wrong, I still LOVE Taco Bell, but that is for the weekends. After lunch Anu suggested we get Starbucks, how could I say no? I ended up getting the Dark Cherry Mocha which was so delicious… I was really able to taste the cherry and chocolate. We walked around the mall for a bit and then I had to say bye and head back to work. I’ll see her real soon. 🙂
Okay, so remember how I told you I was going to the Shakira concert, well it turns out I didn’t go. There was such a HUGE mix up… I thought the tickets were mine, but they were already canceled. I was sad! Well, Shakira is still young, I’m pretty sure she’ll perform again in the next five years so I have hope. 🙂
Today I had a message from a user named, Roslyn, she gave me some constructive criticism on my blog and I have decided to consider her advice. I just want to thank Roslyn if you are out there reading this that I appreciate your suggestion.
So today I made an Indian dish with boiled eggs cooked in a cilantro paste. I made Dhaniya Baingan (Brinjals cooked in a Cilantro Paste) a while ago and my husband loved it sooooo much that he suggested I follow the same recipe and use boiled eggs instead. This recipe turned out really good… it was his brains and my hard work. 🙂 We had some leftovers so tomorrow I plan on turning this into an Egg Pulao (Rice Pilaf) dish with some frozen peas. If you decide to try this, let me know how this turns out for you.

NUTRITION: Eggs are a good source of Protein and Vitamin D. The yolks do contain a lot of cholesterol, however the yolk contains tons of nutrients that are good for you.
INGREDIENTS:
- Garlic – 1 clove
- Ginger – 1/2 inch piece
- Green Chilies – 2
- Fresh Cilantro – handful
- Water – 2 tbsp (just to get the grinder/blender going)
- Eggs – 8 medium (or 6 large) – (boiled & cubed)
- Olive Oil – 1 1/2 tbsp
- Cumin Seeds – 1 tsp
- Nigella Seeds – 1/2 tsp
- Turmeric Powder – 1/2 tsp
- Red Onion – 2 medium (sliced)
- Red Chili Powder – 1 tsp
- Coriander Powder – 2 tsp
- Water – 3/4 cup (you may use 1/2 cup if you want less gravy)
- Garam Masala – 1/2 tsp
- salt to taste
DIRECTIONS:
1. Boil eggs.
2. In the meantime, slice the onions.
3. Heat a pan on medium heat, once hot, add Olive Oil, cumin seeds, and nigella seeds.
4. Once the seeds begin to sizzle, add the turmeric powder. Saute for 5 seconds.
5. Now add the sliced onions. Season with salt. Saute for 5-7 minutes or until onions become golden. Reduce heat to dial #3.
6. In the meantime, make the cilantro paste. Here is what you’ll need. Grind the ingredients into a smooth paste using a Magic Bullet or Blender. Set aside.
7. Now check on the onions, this is what you should have… slightly golden.
8. Add the cilantro paste. Season with salt. Combine. Saute for about 6-8 minutes. The color of the cilantro will darken.
9. Check on the eggs, they should be done by now.
10. Peel the eggs and cube each egg into 4s.
TIP: Notice how I removed the yolk from a few eggs, this will save fat, calories, and cholesterol.
11. Check on the onion-cilantro paste. Add the cubed eggs.
12. Season with salt, coriander powder, and red chili powder.
13. Combine.
14. Now add 1/2 to 3/4 cup of water… I added 3/4 cup.
15. Combine and the yolks will help form a creamy gravy.
16. Cover and simmer for about 3-5 minutes.
17. This is what you should have. Adjust salt. Turn off the stove.
18. Add garam masala. Combine. Serve with naan or rice.
