Ready for some lightened-up TOFU MAKHANI? As my base, I used @pacificfoods Organic Cream of Cauliflower Condensed Soup which works beautifully in this sauce. The makhani sauce still tastes just as delicious and authentic as when it is traditionally cooked with dairy cream. I love using Pacific's condensed soups in my cooking as it's a huge timesaver, and made with quality, gluten-free ingredients. Pick up a can and give this recipe a try - link in bio for where to buy! TOFU MAKHANI RECIPE:

INGREDIENTS:
for the tofu
14 ounces extra firm tofu, pressed & cubed
1 tbsp oil

for the paste
1 medium yellow onion
1 inch piece ginger
8 cloves garlic
2 green chilies
2 cardamom pods
2 tbsp water

for the makhani sauce
1 tbsp avocado oil
1/8 tsp hing (asafetida)
1 tsp cumin seeds
1/2 tsp turmeric powder
2 cloves
1 inch piece cinnamon stick
paste from above
1 can @pacificfoods Organic Cream of Cauliflower Condensed Soup
1/2 cup tomato paste
1 cup water
1 1/2 cups whole milk, 1% or 2% will work too
1 tsp coriander powder
salt to taste
1/4 tsp red chili powder
2 tbsp kasoori methi, I like MDH
1/4 tsp garam masala
handful fresh cilantro leaves, chopped

DIRECTIONS:
1. Press the tofu then lightly saute the tofu in oil for 3-5 minutes until sightly golden. Set aside.
2. Make a paste combining the ingredients mentioned in a food processor.
3. Heat pan on medium heat. Add oil, hing, turmeric powder, cinnamon stick, cloves, and cumin seeds. Sauté for a minute.
4. Pour the paste and sauté on low-medium heat for 10 minutes. Season with salt.
5. Once liquid evaporates, add a can of @pacificfoods cream of cauliflower condensed soup. Cook for 5 minutes.
6. Add tomato paste. Cook for a couple of minutes on low-medium heat.
7. Add water. Gently stir.
8. Add milk SLOWLY to avoid curdling.
9. Add coriander powder and salt. Cook for a couple of minutes.
10. Add the sautéed tofu to the sauce. Season with red chili powder. Stir. Cook for about 8 minutes on low-medium heat.
11. Add dry kasoori methi and a touch of garam masala. Stir.
12. Garnish with lots of fresh cilantro. Serve with garlic naan, roti, or rice. Enjoy!

Celebrating my first Mother’s Day with my little kishmish. Krish - thank you for making me your mama, thank you for being mine. ❤️ I was someone who was always scared of motherhood because of the responsibility and delivery. My attitude was always it’ll happen when it happens. Being an aunt was so much easier because it truly was/is the best of both worlds - you get all the love with zero responsibility. 😊 Motherhood is hard. It’s nonstop, day and night! It’s harder than any corporate job I’ve ever had. On days that are especially hard, I am so grateful to God for this blessing in my life because the journey to motherhood was not easy. There is a lot of pain and suffering in the world right now. There are those who have lost loved ones, including their moms. To them - you are in my prayers. With everything going on in the world, it’s so important to count our blessings for what we have and keep things in perspective. 🙏🏼 And with that, a very Happy Mother’s Day to my mom - thank you for all you do. I appreciate you now more than ever 💗. Happy Mother’s Day to all you moms out there who show up every single day for your kids. I hope you get some “me time” today. My scones are buttery, crumbly, and so delicious. Making scones is actually much easier than you think. 20 minutes to prep the dough and another 15 to bake. It’s the perfect Mother’s Day treat!⁠
