Blueberry Coco-Lime Cream Cheese Sandwich… a sweet breakfast!

Every single day I came home from work this past week, my husband was home before me catching up on old seasons of Entourage. blueberry cream cheese sandwich 021

It’s like Sex and the City for men, only that the language is a LOT worse.
Every other word is…
   F this.
   F that.

Clearly, I ended up sitting through some of the episodes as I surfed the internet and caught up on my blog reading.  It’s been like a nonstop Entourage marathon at our home.blueberry cream cheese sandwich 027

But by the time Thursday rolled around, I couldn’t take it anymore, and after a couple episodes of Entourage, I asked him can I PLEASE just watch Ellen and Food Network for a little while and not have to listen to any more cussing.  blueberry cream cheese sandwich 039

Since he can be quite nice at times, he responded, “sure” and handed me the remote immediately.  blueberry cream cheese sandwich 008

Oh how I am looking forward to another week of f this and f that, but I’ll admit the show is quite entertaining, else I wouldn’t have lasted till Thursday.

By now you must be salivating, so let’s talk food.  For a while now I’ve been dreaming of making a dessert-like blueberry sandwich with cream cheese for breakfast.  I experimented with lime zest and coconut to further enhance the flavor of this scrumptious sandwich.  This end result is so delectable, and filling which is a good thing.  Just half a sandwich filled me up.  And just fyi… I made it as healthy as I possibly could.  Enjoy!

NUTRITION: Blueberries are a very good source of Vitamin C and Fiber.  They are a good source of Vitamin E. In addition, blueberries are an ANTIOXIDANT POWERHOUSE.  Coconut is low in cholesterol and sodium, and it is a good source of fiber.  Cream cheese is a good source of Protein and Calcium, but should be eaten in moderation due to its fat content.  Whole Wheat bread adds Protein and Fiber to this sandwich.




INGREDIENTS (cream cheese spread makes 2 sandwiches):
for the blueberry cream cheese spread:

  • Neufchatel Cream Cheese – 2 ounces  (or use 1/3 Reduced Fat Cream Cheese)
  • Milk 2% Reduced Fat – 1 1/2 tbsp 
  • Pure Vanilla Extract – 1/2 tsp
  • Ground Cinnamon – less than 1/8 tsp
  • Lime Zest – zest of 1/2 a lime
  • White Sugar – 1 tsp 
  • Blueberries – 1/2 cup  (chopped in half or roughly chopped)

for the sandwich:

  • 100% Whole Grain Bread – 2 slices per sandwich
  • Butter – just a glaze on the skillet
  • Blueberry Cream Cheese Spread – 2 spoonfuls  (1 spoonful on each side)
  • Organic Unsweetened Shredded Coconut – 2 tsp  (1 tsp on each side)





DIRECTIONS:
1. In a bowl, combine the cream cheese, milk, vanilla extract, and ground cinnamon.
2. Mash and mix until you get a smooth consistency.
3. Add lime zest.  Mix.
4. Add sugar.  Mix.
5. Add the chopped blueberries.  blueberry cream cheese sandwich 144
6. Mash the blueberries as you mix.  Should be a purplish color.
7. Take 2 slices of bread.  Spread the blueberry cream cheese spread on each side.
8. Heat a cast-iron skillet on low-medium heat, dial #4.blueberry cream cheese sandwich 125
9. Place the 2 slices of bread on the skillet.
10. Top with unsweetened coconut on either side of the sandwich. 
11. Place one slice of bread over the other.  blueberry cream cheese sandwich 155
12. Cook on each side, gently press.blueberry cream cheese sandwich 157
13. Slice in half and serve immediately.

    What a wonderful and delicious breakfast! So different too than what I normally eat! I haven't seen entorourage (and I won't tell my husband about it!) I'm all about the food network and Ellen too 🙂

      I'm not even sure what season my husband is on, I just sit and watch it. It's definitely a guy thing, I tune the show out once I am on the internet. 🙂

    Suddenly my bowl of oats don't seem as exciting ;)! Although I don't think I could eat this for breakfast, I would definitely make it for brunch or lunch! My sis is actually visiting soon and I think she would love this- will let you know if we make it :)! I bet that cream cheese mix would be a fab pancake/French toast topper too….in fact, I'm sure you could remix the cream cheese mixture with various fruit alternatives and sometimes subbing out the lemon zest for orange zest!

      Oats are exciting all the time K. I prefer savory breakfasts too, I ate this around 1 pm. 🙂 Yes, let me know how it turns out. Yup, the mix would taste amazing on pancakes or French Toast. You're full of ideas today. 🙂

    oh my Entourage is a pretty common with the boyfriend here too – not going to lie I kind of liked it but not a marathon. I will do sex and the city instead 😛 okay on a different note – these sandwich look so gooood. I have been craving stuffed french toast or something lately but this will work toooo

      Yeah, I don't mind it, but not back to back. I could watch SATC back to back, anyday! Love French Toast.. I've been wanting to by challah bread so I can make it.. after Miami. 🙂

    This is brilliant! I make your oatmeal 'bressert' often now, especially when we have guests over the weekend. It's got that wow factor when you compare it to boring stovetop oatmeal. This is the perfect companion! Never tried cheese and coconut. Will give it a shot!

    I agree that Entourage is like Sex and the City for men. My husband used to watch it. Luckily he can't stay committed to a TV show that long.
